Meatballs, Ribs and Chicken

Something special for someone special ... original recipe meatballs (one kid friendly, the other hot and spicy), bacon wrapped chicken breast and baby back pork ribs.

First up, the bacon wrapped chicken breast. Homemade bacon slices, mustard, and Blues Hog seasoning.

I coated the chicken breast with mustard, then applied a coating of Blues Hog seasoning.

Meatballs, had a lot of ingredients, seen here are the ingredients for the kid friendly meatballs; panko breadcrumbs, Mad Hunky GP rub, French’s Yellow mustard, beef mince, pork mince, spring onions, egg, coriander and  Three Little Pigs Kansas City Competition BBQ sauce.

Put them all in a big bowl, mix thoroughly ...

Form into 20 balls of similar size.

With the kid-friendly meatballs made I added some extra ingredients for some hot and spicy adult-friendly meatballs; Three Little Pigs Kansas City Competition BBQ sauce, mandarin marmalade, habanero chilli powder, green chillis and black pepper.

Combine the extra ingredients, form into meatballs and sprinkle with some BBQ seasonings.

By this time the baby back ribs were well on their way, and were starting to take on some smoke.

I wrapped a few of the adult-friendly meatballs with a slice of bacon.

It took about an hour and a half for the meatballs and chicken to cook through and be ready for the table.

 When the meatballs and chicken were almost cooked I glazed them with a sauce made from the Three Little Pigs Kansas City Competition BBQ sauce, maple syrup, apple juice and honey.

The bacon wrapped chicken breast glistened in the light and looked very enticing.

Sliced an inch thick, it was wonderful and juicy, the bacon forming a barrier enabling the breast to stay nice and juicy.

The baby back ribs had a great smoke ring and were perfectly tender.

Served with some commercially produced onion rings and jalapeno poppers.
