Karl Strauss is who gave me my start in beer so they hold a special place in heart and have played an important roll in my life. #Repost @brewjayofficial ・・・ #WBW the time that @lazy_creek_brew and myself decided to play around with some dry ice for a faster knock out of our wort... it did not work. This made me think of ways that people tell me both in chatting about homebrewing and on the professional level. Some of the first pieces of advice I can tell you- don't expect it to go fast. Sometimes knocking out will take a while, so long as its not 2 hours or something, expect 45-60 minutes! the thermodynamics involved in cooling down a 200°+ liquid down to 70°~ liquid takes a lot of effort! In professional breweries, sometimes they will have two stage heat exchangers where the wort is initially cooled off by ground water, and then by gylcol. But this can be troublesome for two reasons, 1. how cold is your ground water? It can be in the 50's or under in certain places but where I'm at in CA it averages 70's for groundwater sometimes. That's a lot of difference in cooling capability. And 2. How large is your glycol reservoir? Many breweries are undersized for the load. The moral of the story.
