A high school student in Barrington, Illinois, Tara Gutzmer also leads the custom crochet business Fluff-n-Stuff and excels at fabric spinning and crocheting. Her entrepreneurial offerings extend to collector puzzles and arrangements of succulents. A member of Fiber Friendzy and the 4H Spin Club, Tara Gutzmer has earned distinction on multiple occasions as a 4H Heritage Arts and Fiber Arts State Champion. Tara Gutzmer also excels academically and is a member of the National Honor Society and the Latin Honor Society. She has been a semi-finalist in a Latin National Merit event and placed third in the Illustrated Advanced Division of the Illinois 4-H State Public Speaking Contest. This category centers on informing, motivating, or persuading through the use of a visual aid and often involves audience participation. Ms. Gutzmer also enjoys gardening, puzzling, and writing. The Benefits of Joining Illinois 4-H

4-H is the largest positive youth development organization in America with nearly 6 million young people across the United States participating in its programs. The organization now operates a global network that empowers youth spanning over 70 countries.
The institution offers a range of opportunities for involvement in clubs, camps, school enrichment, after-class projects, and special interest programs which provide skills necessary for lifelong leadership. These endeavors are supported by research-informed practices aimed at fostering positive personal development.
The fundamental aim of 4-H is to foster a community that offers supportive relationships and avenues for youth to serve and lead. It provides engaging and hands-on activities where youth learn by doing and acquiring skills they can utilize now and in the future. While rooted in their local communities, members also have opportunities to engage in state, national, and international experiences.
Illinois 4-H welcomes all children and teens aged 5 through 18 living in the state to become members. The organization represents the largest out-of-school youth organization in the state, with nearly 200,000 youth currently enrolled in its programs and clubs present in all 102 counties.
Activities offered by Illinois 4-H are facilitated by a network of more than 100 public universities nationwide that collaborate to provide experiential learning opportunities for youth. A dedicated network of 4-H staff, volunteers, alumni, and partner organizations serve youth across the state through the University of Illinois extension program.
Participation in regular meetings is a key facet of membership in Illinois 4-H. Club gatherings extend beyond routine get togethers. They offer members the chance to hone decision-making skills within a group setting, and consist of structured sessions. Meeting components include an opening call to order and pledge of allegiance, business discussions, educational programs, and recreational activities that are designed to foster leadership and camaraderie.
4-H offers a diverse array of projects tailored to members’ interests, allowing them to delve into topics ranging from culinary arts to robotics to caring for various types of animals. Youth acquire practical skills while enjoying the process of discovery and personal growth through project-based learning. As members progress through their projects, they can advance to higher levels as they master the skills required at each stage.
Recognition and awards have always played a vital role in the 4-H program, as they serve as a powerful motivator for youth involvement. The Engage Award recognizes the value of 4-H clubs within the program. No formal application is necessary to receive this recognition, as local extension offices may honor select clubs in newsletters, social media spotlights, news coverage, and through other means. Recognition is also offered to clubs that are immersed in diverse experiences and those that demonstrate excellence in the areas of community service, leadership, and project mastery.
Illinois 4-H offers members a chance to receive a State Award Scholarship. This scholarship recognizes youth who have consistently demonstrated outstanding achievement and expertise in 4-H activities in categories such as animal science, leadership, and civic engagement/global living throughout their membership. Applications are open to current Illinois 4-H members aged 15 to 19 who have been active in the program for at least two years. Recipients receive a $1,000 scholarship upon proof of enrollment in an approved post-high school educational program. Scholarship funds must be utilized before the recipient turns 24 or the scholarship will be forfeited.
Illinois 4-H members also have access to the Superior Young Producer Scholarship, which is sponsored by the Illinois State Fair. This program awards three $1,000 scholarships annually to members involved in dairy projects. Nine scholarships are also distributed among members for beef, sheep, and swine projects. Contests held during the Illinois State Fair require participants to compete in three to four elements such as management tests, skill-a-thons, judging contests, and meat identification or testing. Contestants must be aged 14 to 18 to compete.

Allergen Friendly Gluten Free Cooking
Individuals with dietary restrictions benefit from allergen-free cooking, including those with nut and egg allergies or those who experience celiac disease, an autoimmune disorder. Allergen-free cooking means preparing meals without the ingredients that trigger allergic reactions, such as gluten.
Diets consisting of gluten can activate an immune system response that damages the small intestine’s lining in individuals with celiac disease. It blocks the body’s ability to absorb nutrients from food.
Even individuals without celiac disease and no small intestine degradation can experience gluten sensitivity and symptoms such as bloating, abdominal pain, diarrhea, constipation, and headaches or brain fog. Gluten ataxia is a separate autoimmune disorder that impacts various nerve tissues and causes challenges in voluntary muscle movement and muscle control. Beyond these, people may also have wheat allergies, similar to other food allergies. They result from the immune system erroneously classifying a protein in wheat, such as gluten, for a bacteria or virus and can result in breathing difficulties and nasal congestion.
A gluten-free diet avoids grains such as barley, rye, wheat, and sometimes oats. Several gluten-free starches, grains, and flours can replace these, including buckwheat, flax, millet, sorghum, and quinoa. In addition, rice, soy, and corn contain no gluten. Some individuals must avoid pasta, crackers, French fries, bread, cake, and beer unless the labels clearly state the product is “gluten-free.”
Creating a gluten-free meal at home is relatively simple and painless. For example, while traditional pizza dough tends to be high in gluten, modifying the flour and adding other ingredients, the pie can easily be made gluten-free.
The key is to use an all-purpose flour blend from an ingredient such as rice. It’s important to find finely milled rice flour to avoid grittiness. It also helps the rice flour blend more easily with other ingredients. Some rice flour products for pizza dough combine whey protein isolate, a milk protein powder commonly found in low-carb recipes and consumed by bodybuilders. Whey protein responds to baking the same way wheat gluten does. However, it tends to soften raw dough, making it difficult to form into a base crust. Adding modified tapioca starch creates an elasticity that translates to a chewier finished crust, mimicking wheat flour crust.
For a gluten-free gravy, combine broth or an ingredient such as turkey drippings with a 1-to-1 gluten-free flour ratio, such as a xanthan gum product from Bob's Red Mill. The other ingredients must be cool, as mixing xanthan gum with heated items results in a clumpy gravy. Add heat once the flour is in the pot with the other ingredients. Another alternative is to avoid flour altogether and use cornstarch, which is naturally gluten-free, as a thickener.
Individuals can use xanthan gum flour to create homemade gluten-free pasta since it elevates the texture and binding. Eggs are also essential in providing an authentic texture and taste. While chia egg and flax egg products exist, they often change the texture, making it more challenging to shape the dough. Adding tapioca starch/flour enhances elasticity and chewiness, as with pizza dough. With creativity and similar flour ingredients, home chefs can also painlessly create gluten-free meatballs, pancakes, and cookies.
