my failsafe dinner is roasted chickpeas w veggies of choice, mix them together w olive oil/paprika/turmeric/curry powder/cayenne/etc, put them in the oven @ 400 for 30 min then serve w pearl couscous, rice, or quinoa depending on preference! I always add hot sauce/feta/tahini at the end to taste :)
