okay so i thought about this for a while gravity is responsible for creating different layers of gases with lighter and hotter ones on the top. Hence when a candle is lit the hotter molecules rises and we get the fusiform shape. In absence of gravity the hot air need not rise hence the shape of the heated molecules aka flame will be spherical as shown

as for the change from red color to blue color. Blue flames indicate 100% combustion. Im guess in presence of gravity since the hotter combustible molecules rises they leave the core zone of maximum heat and the flame turns red as incomplete combustion is occurring. However since the heated incompletely combusted molecules are not going anywhere they have enough time to be fully broken down thus giving a uniform blue orb
