I don't see anyone talking about how they showed Astrid's character development through her hair so I'm going to.
In HTTYD 1 we get this very emo lookin cut. Since the first movie is told through Hiccup's POV, it matches how he sees her: unapproachable, scary, and tough. Even the back of her hair, it's tied up tightly to show her uptight and no-nonsense attitude.
But after she sees Hiccup for who he is, she pushes her hair out of her eye so he can see her entire face. Almost like she's "letting him in", if not to be cliché. He gets to look her in the eyes when he talks to her, whereas before he avoided her stare.
Then we get to RTTE and her fringe is shorter and doesn't completely cover her eye as much. Her hair is much softer, showing how she herself has softened (preferring capture over kill missions as she says). And the back of her hair is looser and bounces about the place.
In HTTYD 2, there's not a huge change because RTTE happens pretty close to the second film but her hair is on the side now. You could take this as her being less uptight and war obsessed because a braid on the side isn't very practical for battle but she's a lot more relaxed about it now. Edit: also there hasn't been as much war in the last 5 years than there was before HTTYD 1 so choosing aesthetic over function is a lot easier to do. She doesn't have to sacrifice her beauty anymore for the sake of fighting.
And in HTTYD 3, her fringe is out of her face and her hair is fully let down. She's relaxed and comfortable with her femininity as well that she's so toned back from how angry she used to be in HTTYD 1 like she said, "I'm the person I am today because of you," - it really shows the effect her relationship with Hiccup has had on her. That he's made her comfortable to embrace her feminine side.
(side note, her hair in HTTYD 3 was gorgeous)
And you could even say her marital braids represent Zephyr and Nuffink.
I've just always loved how they showed her change through her hair, it's such a cool and subtle way to do something like that. And of course, it's beautiful 😁

Reminders and observations of certain canon things, courtesy of my httyd1 rewatch yesterday and today
Tuffnut has a tattoo somewhere on left side - it shows off how "killing a Monstrous Nightmare is his destiny"
Hiccup's arms are shaking when he's hyping himself up to kill a Night Fury
There's a shield stuck in the cove
Toothless doesn't run at and try to Astrid in the cove until she tackles Hiccup to the ground - he thought she was attacking Hiccup
Astrid was originally mad at Hiccup in training because she thought he wasn't taking it seriously. ("Is this some kind of a joke to you? Our parents war is about to become ours. Figure out which side you're on.") When he progresses past her ("Wow, he's better than you ever were!") and she's the one who starts getting left behind, that's when her emotions towards him shift. That's when the jealousy starts creeping in, and the reason for her anger changes.
Hiccup wanted to tell Stoick about Toothless, about what happened, but he was scared and didn't know how to.
The first person who's friendly to Hiccup in the movie is that one Viking who cheerfully screams "MORNIN'!" in Hiccup's face
The only person who doesn't yell at Hiccup to "get back inside" in the beginning of the movie is Gobber. Instead, he simply asks what took Hiccup so long and quips he thought he'd been carried off
Hiccup left the eel in Barf and Belch's pen. There's no way they ate it. So, for awhile, that zippleback had to put up with an eel in their space. This had to have confused the next Viking to opened the pen, because how did an eel get there??
Stoick doesn't stop the fight in the ring until Hiccup throws away the helmet. The helmet made of Valka's breastplate. The helmet Stoick gifted to him.
Stoick: You are many things. But a dragon killer isn't one of them
Gobber, dropping Hiccup off at the house: Stop trying to be something you're not
Hiccup, in the ring: I'm not one of them
At some point, Hiccup took the time to properly paint and color his cheat sheet with the tail fin positions. The last scene we see it in, it's no longer just charcoal sketches
Other than Spitelout, there tends to always be another Viking with Stoick in noteworthy scenes. A blonde woman, with her hair pulled back into two thick braided buns on either side of her head.
Only one boat came back from the search for the Nest. Three left Berk
Hiccup is totally unfazed by the spinning and diving and totally out of control flying Toothless pulls off in that one scene with Astrid. He's either gotten very, very used to flying, has done some stunts with Toothless already, or both. Because in that scene, all he is annoyed
Hiccup stood on the cliffside until Berk's entire armada was out of sight. He was... There for awhile, y'all
When Hiccup says "I did this" in the forest, staring at the Night Fury he shot down...it's so guilt ridden
Just like Stoick is when he kneels before Toothless after the battle of the Red Death and says the exact same thing
The first time we see Toothless in the woods, we can see his left tailfin missing. The animators are good
When Hiccup leaves his house after waking up, and the camera pans over Berk, it shows resting places for dragons have been built, and there's a house with a Nadder theme
Berk has been around for 7 generations
While Hiccup was bedridden, someone took the time to rebuild his saddle and Toothless's tailfin. And all of the rigging that goes with it. Gobber likely went into Hiccup's part of the forge and found the designs. Then he took the time to design a new pedal to work with Hiccup's new prosthetic
Hiccup does not manage to successfully hide away all of his Night Fury drawing when Stoick enters the forge that night. He tries very hard, but fails. Thankfully, Stoick is distracted
