Gail's Energy Balls!
Ingredients:
About 1 to 1-1/2 cup of pitted, coarsely chopped dates (about 10-12 dates)
About 1/2 cup of shelled pistachios (can probably also use cashews or peanuts)
About 1/4 cup of shredded coconut, sweetened (what I used) or unsweetened
About 1/2 to 1 teaspoon of chia seeds (optional)
About 1/2 teaspoon of protein powder (optional)
About 1 teaspoon of cinnamon (can also put a dash of nutmeg or cloves, if you want)
Few dashes of flaky sea salt
Put it all in a small food processor and chop until everything is well mixed and chopped up, probably 1 to 2 minutes in a series of pulses.
Dump it into a bowl and squish it with your (clean) hands to further mix it up and make sure the ingredients are well dispersed. 
Roll into ~ 3/4 inch balls, put on a plate or wax paper and refrigerate for an hour or two, so they're chilled and set.

Hamburger Stew
1 lb. of 90% ground beef, three cans of Campbell’s Vegetarian Vegetable soup, 1 onion, 1 bag of small new or baby dutch potatoes, minced garlic
Quarter the potatoes and boil for about 20 min. In a big pot, brown the ground beef but don’t drain. When it’s done, add chopped onion and seasonings (I used thyme, parsley, tarragon, red pepper flakes, and a dash of salt & pepper) and cook for 5 min. Add the cooked potatoes. Add the 3 cans of soup, plus 2 cans of water. Stir and simmer for 15-20 min. Serve with shredded cheese and sour cream and/or over rice or egg noodles as desired.

Great Morrocan meal
-spiced lentils with parsley and tomatoes
-Air fryer chicken thighs
-couscous with golden raisins and fried chickpeas
Make the lentils recipe below. I used green lentils. I used one large ripe tomato, and one can of slightly drained fire roasted tomatoes. I also used to generous spoonfuls of minced garlic in place of the garlic cloves. I used regular parsley, not Italian.
While the lentils are cooking, make the spice mixture. This is basically a teaspoon each of ground ginger, cumin, cayenne pepper, paprika, and a half teaspoon of garam masala blend.
Make the rest of the meal when there is about 20 minutes left before the lentils are done. Seasoned chicken thighs with the spice mixture and cook in air fryer, adding a few prunes if desired. Drain the can of chickpeas, put in small pan with a little olive oil, and fry for about 10 minutes, tossing occasionally, and sprinkle spice mixture on chickpeas.
Cook couscous according to package directions, using a little salt and pepper and a little of the spice mixture if desired, and then toss in a quarter 2/3 cup of the golden raisins.

Gail’s Mac and Cheese
1 lb elbow mac
Can of regular Campbell’s cheddar cheese soup
1 stick of butter
1/4 cup sour cream
1/4 cup half & half
3-4 cups shredded sharp cheddar
1/4 tsp salt, 1/4 tsp red pepper flakes, 1/2 tsp smoked paprika
Boil pot of water; add elbow mac and cook until done. Meanwhile, melt butter in saucepan. Add soup to melted butter. Add cheese to butter/soup mix in batches and let melt. Add sour cream and half & half, along with red pepper flakes and smoked paprika. Keep stirring to combine and melt. Drain pasta and mix in cheese sauce and salt. Stir well. Serve.

One-Pot Cajun Chicken Pasta

2 tablespoons olive oil                      
1 pound boneless, skinless chicken thighs (about 4), cut into 1-inch pieces     
2 1/2 teaspoons Cajun seasoning                      
3 medium green bell peppers, cut into 1/2-inch pieces      
1 sweet onion, thinly sliced                     
2 cloves garlic, chopped (I used a heaping spoonful of minced)
12 ounces smooth penne                   
4 cups low-sodium chicken broth                      
One 14.5-ounce can diced tomatoes  (I used petite diced)                   
6 ounces cream cheese, cubed, at room temperature                      
Kosher salt                      
4 scallions, sliced, for serving         
                                Heat the oil in large wide pot over medium-high heat. Add the chicken and Cajun seasoning and cook, stirring occasionally, until the chicken just starts to change color and the spices are toasted, about 2 minutes.            
                      Add the peppers and onions and cook until they just begin to release some of their juices, 3 to 4 minutes. Stir in the garlic and cook until softened, 1 minute.            
                      Add the pasta, chicken broth and tomatoes and bring to a boil over medium-high heat. When it boils, continue to cook, stirring occasionally, until the pasta is al dente and the sauce is thickened and reduced by about half, about 15 minutes.            
                      Remove from the heat and add the cream cheese and 1 1/2 teaspoons kosher salt. Stir until the cream cheese is combined and melted. Don't worry if the sauce looks runny, it will thicken as it sits. Top with sliced scallions.

Ilene’s Taco Tots
 1# ground turkey
 3 TBSP taco seasoning, divided
 1 cup chopped onion
 1 cup canned black beans, drained and rinsed
 1 cup Mx blend shredded cheese (or cojita?)
 2 cups frozen tater tots
 Preheat oven to 425.
 Brown ground turkey in a large skillet with 2 TBSP seasoning & onion, brown a little bit and then
 Add the black beans; stir to combine.
 Spread mixture into a 13x9” greased dish & top with cheese.  
 Spray tater tots (in a separate bowl) lightly with cooking spray and toss with 1 Tbsp seasoning.
 Put tots on top of cheese.
 Bake 20-25 minutes until tots are crispy.

Gail’s Baked Pasta
1 1/2 lbs small penne pasta
1 lb mild Italian sausage
Green pepper
Mozzarella and parmesan cheese
Can petite diced tomatoes
Jar of pasta sauce (vodka sauce preferred)
1/2 small jar of pesto
Cook/drain pasta (al dente) and brown sausage. Dice green pepper. Combine pasta, sausage, green pepper, 1/2 cup each mozzarella and parmesan cheese, diced tomatoes, pasta sauce, and pesto; add dashes of salt. Add fennel and oregano if desired. Spray 8 1/2 x 11″ dish and add mixture. Top with sprinkling of cheeses and bake about 15 min in 375F oven.

Cowboy Beans
Onion - 2 peppers - chorizo - 2 or 3 cans of beans, such a drained black beans and undrained mild chili (pinto) beans - bbq sauce
Remove casings from chorizo sausage and brown. Remove from pan and drain off fat. Add a couple of tablespoons of bacon grease and saute one chopped onion and two chopped peppers. Add Worcestershire sauce, red pepper flakes, and smoked paprika. Add one can of mild chili pinto beans and one drained can of black beans (could add a can of kidney beans too). Add chorizo back to pan and add about one half cup of barbecue sauce (Sweet Baby Ray’s is best). Let simmer on low heat covered for about 20 min, stirring occasionally. Serve with sour cream if desired.

Easy Gnocchi
Package of gnocchi; sun-dried tomatoes; artichoke hearts; shredded mozzarella; basil; parmesan
Heat 2-3 T of olive oil in large pot. Add 1 t. minced garlic. Saute gnocchi for a few minutes. Add drained sun-dried tomatoes and artichoke hearts and heat through. Stir in a handful of chopped fresh basil or a squeeze or two of bottled basil. Throw in 1/4 c mozzarella at the end. Finish with parmesan.
Serve with garlic bread and a salad (mixed greens with diced cheese, dried cranberries, and candied nuts).

Quinn’s Homemade Ravioli
Fresh mint and sage, chopped
Fingerling potatoes, cooked 20 min & quartered then mashed
Finely diced onion
Finely chopped cooked chicken (use frozen strips)
2 cloves finely diced garlic
1/2 stick browned butter
Few lime squeezes
Cook onion and garlic together for a few minutes. Add chicken and herbs and cook for another few minutes. Mix with browned butter and mashed potatoes and add lime squeezes. Lay out wonton wrappers. Dampen edge of each with water. Filled with 1 to 2 tablespoons of potato filling. Put another wonton wrapper on top and sealed. Lay out on cookie sheet. Glaze generously with egg wash. Sprinkle with salt and pepper. Cook at 350° for 6 to 7 minutes until brown. Can serve with a dipping sauce or squeeze a little lime on top.
