Rotisserie Style Chicken in the Slow Cooker Ingredients: 4 lb whole chicken (4 Leans) 1 tsp salt (4 Condiments) 1 tsp paprika (2 Condiments) 1/2 tsp onion powder (1 Condiment) 1/2 tsp dried thyme leaves (1/2 Condiment) 1/4 tsp cayenne pepper (1/2 Condiment) 1/4 tsp black pepper (1/2 Condiment) 1/2 tsp garlic powder (1 Condiment) Directions: Wad three to four pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker. Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Mix the spices together and season the chicken. Rub the seasoning under the skin of the breasts and place in the slow cooker on top of the crumpled aluminum foil. Set the slow cooker on Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.The original directions state to cook the chicken on High for one hour and then low fr 8 to 10 hours but I just cooked it on Low for 9 hours. Remove skin and bones before eating. You can have 5 oz of dark meat (legs, thighs or wings) or 6 oz of white meat (breasts). *You can also bake this chicken in a preheated 250 degree oven uncovered. If you had two 4 lb chickens, you would bake it for 5 hours. Buffalo Chicken Stuffed Peppers Ingredients: 12 ounces cooked chicken breasts, chopped or shredded (2 Leaner Leans) 1/2 cup celery, chopped (1 Green) 1 cup reduced fat sharp cheddar cheese, divided (1 Lean) 3 tbsp reduced fat cream cheese (3 Condiments) 1/4 cup Frank’s hot sauce (2 Condiments) 1/4 cup light ranch dressing (2 Healthy Fats) 4 bell peppers any color, each cut in half from stem to base, tops and seeds removed (8 Greens) Directions: Preheat oven to 400 degrees. Slice the tops of the peppers, horizontally like a lid. Cut the peppers in half from top to bottom. Remove the seeds and membranes. Lay pepper halves on baking sheet and cook 8 to 10 minutes if you prefer al dente peppers, or 10 to 15 minutes if you prefer soft peppers. Combine, chicken, celery, 1/2 cup cheese, cream cheese, Frank’s hot sauce, and ranch dressing in a large bowl. Stir until combined. Stuff your peppers with the chicken mixture. Then top with 1 tbsp of cheese per pepper half. Firecracker Grilled Salmon Ingredients: · 1 tablespoon balsamic vinegar (3 condiments) · 2 tablespoons reduced-sodium soy sauce (2 condiments) · 1/2 cup (1.76 oz) green onion, thinly sliced (1 green) · 10 sprays olive oil spray (1 condiment) · 2 tablespoon walden farms maple syrup (1 condiment) · 1 garlic clove, minced (1 condiment) · 1 teaspoon ground ginger (1 condiment) · 1 teaspoon crushed red pepper flakes (2 condiments) · 1/4 teaspoon salt (1 condiment) · 4 8oz raw salmon fillets (4 leans) Directions: 1. In a small bowl, combine the first 9 ingredients. Pour 1/4 cup marinade into a large resealable plastic bag. Add the salmon; seal bag and turn to coat. Refrigerate for as long as you want because I don't believe in hard and fast rules. Cover and refrigerate remaining marinade. 2. Drain salmon, discarding used marinade. Using long-handled tongs, moisten a paper towel with pam and lightly coat the grill rack. Place salmon skin side down on grill rack. Grill, covered, over high heat or broil 3-4 in. from the heat for 5-10 minutes or until fish flakes easily with a fork, basting occasionally with remaining marinade.
