Transform bland canned green beans into a zesty and vibrant side dish with a lemony twist. Say goodbye to the taste of a tin can!
Ingredients: 2 cans of green beans 14 oz each. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon lemon zest. 1 tablespoon fresh lemon juice. 1 teaspoon Dijon mustard. Salt and pepper to taste. 2 tablespoons chopped fresh parsley.
Instructions: Green bean cans should be opened and drained. Heat the olive oil in a big skillet over medium heat. Garlic powder should be added and sauted until aromatic. Dredged green beans should be added to the skillet and stirred to coat in oil infused with garlic. Combine the lemon zest, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Transfer the lemon-mustard blend onto the green beans and mix thoroughly. Cook the green beans for 5 to 7 minutes, stirring now and then, until they are thoroughly heated and nicely dressed with the lemon juice. To serve, top the green beans with freshly chopped parsley. Ingredients: 1 cup dried green or brown lentils, rinsed and drained. 3 cups water. 1 tablespoon olive oil. 1/2 medium white or yellow onion, chopped. 1 medium red bell pepper, chopped. 2 cloves garlic, minced. 1 15-ounce can tomato sauce. 1/4 cup tomato paste. 3 tablespoons pure maple syrup. 2 tablespoons coconut sugar or brown sugar. 1 tablespoon vegan Worcestershire sauce. 1 tablespoon Dijon mustard. 1 tablespoon chili powder. 1 teaspoon smoked paprika. 1/2 teaspoon cumin. 1/4 teaspoon cayenne pepper. 1/2 teaspoon salt, plus more to taste. Freshly ground black pepper, to taste. 6 whole grain or gluten-free buns, for serving.
Instructions: Add lentils and water to a medium pot and bring to a low boil. Cook for 20-25 minutes or until lentils are tender. Drain and set aside. In a large skillet, heat olive oil over medium-high heat. Add onion, bell pepper, and garlic. Cook for 5-7 minutes or until onions are translucent and peppers are tender. Stir in tomato sauce, tomato paste, maple syrup, coconut sugar, Worcestershire sauce, Dijon mustard, chili powder, smoked paprika, cumin, cayenne pepper, salt, and black pepper. Bring to a low simmer. Add cooked lentils to the skillet and stir to combine. Simmer for 5-10 minutes or until mixture thickens. Taste and adjust seasonings as necessary. Serve lentil mixture on buns. Enjoy!

This sauce was made by the Italian mother-in-law of a close friend. The easiest homemade sauce I am aware of, it is also very good. Excellent for lasagna and spaghetti. Oh, and the sugar is the key! Additionally, since I'm a vegetarian now, it tastes fantastic without the meat! Simply swap out the beef for two tablespoons of olive oil.
