Plants I think you should know exist:

Pokeweed, while poisonous, this alien looking plant is known for being eaten when prepared carefully by people knowledgeable with the plant. Bitches get HUGE, I have some outback that are like six foot tall despite the fact we have had almost two straight weeks of frost.

Jewelweed/touch-me-not, these things grew all around my childhood home and I would spend HOURS going around popping the seed pods every day. Rumor has it this plant can prevent poison ivy rashes, idk how true that one is though but apparently this one is also edible.
