What is PPE?
- Personal Protective Equipment or also known as PPE is an important aspect in ensuring safety and cleanliness in food production. It is recommended to use personal protective equipment to enhance the safety of the food, workers, and customers. This is crucial in the food processing industry because most operations are done by hand.
Below are some examples of personal protective equipment used inside the kitchen:
Apron – The use of apron is that it keeps clothes clean and tidy, and it also adds protection from things like spills, food, dirt, and chemicals.

Hairnet – The purpose of hairnet is to keep the worker’s hair from contacting exposed food, clean and sanitized equipment and utensils.

Spit guard/Face mask – Masks or spit guards are worn by food handlers to prevent them from coughing or sneezing onto and contaminating food during the food preparation and handling process.

Chef shoes – It's important to keep your feet safe, especially when there are hot pans and sharp knives being carried around. For chefs, durable slip-resistant chef shoes are the best choice to reduce chances of falling over and protecting your feet.

Gloves – Wearing gloves can reduce the risk of food contamination. Food workers must also wash their hands and gloves must be changed at least every four hours, when returning to work after a break, and when switching tasks.

The Difference Between Cleaning and Sanitizing
The main difference between cleaning and sanitizing is that cleaning is the act of clearing debris and deposits on a surface while sanitizing involves killing bacteria after the surface has already been cleared or wiped off.
Cleaning
- Cleaning is the process of removing food and other types of soil from a surface, such as a dish, glass, or cutting board. Cleaning is accomplished using a cleaning agent that removes food, soil, rust stains, mineral, or other deposits.
Sanitizing
- Sanitizing is the process of reducing the number of microorganisms that are on a properly cleaned surface to a safe level.
