Now! π Fantastic ingredients that pack a nutrient dense punch! π Have a great Hump Day! #wellnesswednesday #rd2be ππΌπͺπ«with @repostapp γ»γ»γ» Some delicious vegan double chocolate protein balls for our fundraising event at the YMCA yesterday! They were a huge hit!! π @healthytown_everywhere 4 pitted dates 2 cups black beans 1/3 cup #arbonne chocolate protein powder 1/4 cup peanut butter 2 tbsp unsweetened apple sauce 2 tbsp flax seed 2 tbsp unsweetened almond milk 1 tbsp cocoa powder 1/2 tsp vanilla extract 1/4 tsp salt 1/4 cup dark chocolate chips Optional: extra chocolate chips to melting and drizzling on top Directions: 1. Place dates in a small bowl and cover with boiling water, set aside for 10 minutes 2. In a food processor, add all ingredients except chocolate chips 3. Roll the dough into small balls and refrigerate 4. If toping with dark chocolate, melt chocolate chips in a double boiler. Creative food/nutrient combos from this awesome RD2Be! Happy Hump Day & stay well! #wellnesswednesday #rd2be @powerdbytiffma with @repostapp γ»γ»γ» One of my most enjoyable rotations as a dietetic intern has been the time I spent working at the Monadnock coop in town! Every other week, another intern and I were responsible for highlighting specific produce items that were on sale with creative, delicious and nutritious recipes. Those who frequent the co-op often are individuals with compromised diets- celiac's, gluten-free, lactose-intolerant, etc, & known food allergens, so we had to make sure most of our recipes were accommodating to these diets. Some of the cool recipes we sampled included: π Vegan sweet potato curry (highlighting sweet potatoes & kale) π₯Mango tart with a date-nut crust (highlighting altaufo mangos) π₯Shredded kale salad with avocado & grapefruit (highlighting grapefruit) π₯Beet & Quinoa salad with miso-dressing (highlighting beets) The photo posted here was the last recipe which was a π₯π₯"Kiwi & Avocado" salsa. We found ourselves having to be superrrr creative sometimes with these ingredients but our creativity came a long way since most people really enjoyed the foods we made π€
