Made carrot soup from scratch today. Cook onions, carrots, Yukon gold potatoes in chicken broth until boiling. Simmer for 20 minutes then blend ingredients. Season to taste. That’s it. Somehow creamy despite being dairy free. Filling and easy dinner. Ready for soup season!
