Arborio rice and savory mushrooms are used to make this creamy and flavorful vegan mushroom risotto, which is great for a comforting and filling meal.
Ingredients: 1 cup Arborio rice. 4 cups vegetable broth. 1 tablespoon olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 8 ounces mushrooms, sliced. 1/2 cup white wine optional. 1/2 cup nutritional yeast. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Set the vegetable broth on low heat in a saucepan. Set aside a large skillet and heat the olive oil over medium-low heat in it. Put in the garlic and onions, and cook them until they become clear. Put mushrooms in the pan and cook them until they start to brown and give off their water. Add the Arborio rice and stir it in. Cook for one to two minutes, until the rice is lightly toasted. If you're using white wine, add it and stir it in until it's all mixed in. One ladle at a time, add the hot vegetable broth to the rice mixture while stirring constantly. Let each addition soak in before adding the next. Do this for another 20 to 25 minutes, or until the rice is soft and creamy. Add the nutritional yeast and season with salt and pepper to taste. Before serving, sprinkle with fresh parsley.

Ingredients: 1 lb boneless, skinless chicken thighs. 2 tablespoons olive oil. 2 tablespoons honey. 1 tablespoon chipotle pepper in adobo sauce minced. 1 teaspoon ground cumin. 1 teaspoon smoked paprika. Salt and pepper to taste. 8 small flour tortillas. 2 cups shredded lettuce. 1 cup diced tomatoes. 1 cup cooked and crumbled bacon. 1/2 cup chopped fresh cilantro. 1/2 cup sour cream. 2 tablespoons fresh lime juice. 1 teaspoon lime zest. 1 clove garlic minced.
Instructions: In a bowl, combine olive oil, honey, minced chipotle pepper, ground cumin, smoked paprika, salt, and pepper. Mix well to create a marinade. Place chicken thighs in a zip-top bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 30 minutes. Preheat grill to medium-high heat. Grill chicken thighs for 6-8 minutes per side, or until fully cooked and slightly charred. Remove from the grill and let them rest for a few minutes before slicing them into strips. In a separate bowl, mix together sour cream, fresh lime juice, lime zest, and minced garlic to make the cilantro lime crema. Set aside. To assemble tacos, warm the flour tortillas. Place sliced chipotle chicken on each tortilla and top with shredded lettuce, diced tomatoes, crumbled bacon, and chopped cilantro. Drizzle cilantro lime crema over the toppings. Instructions: Diced mangoes, maple syrup, lime juice, vanilla extract, and salt should all be put into a blender. Mix until it's creamy and smooth. Put the mixture into an ice cream maker and churn it according to the maker's directions until it's the consistency you want. This should take between 20 and 25 minutes. Put the ice cream that has been churned into a container that can go in the freezer. Freeze for at least 4 hours, or until it is firm. Let the ice cream sit at room temperature for a few minutes to soften a bit before you serve it. Take a bite of your dairy-free coconut mango ice cream.
