Typically, we all think that pasta was invented in Italy but the fact is, there have been recorded reports that showed pasta was being consumed by the Chinese population back in 5,000 B.C. Legend has it that famous explorer Marco Polo introduced the noodles to Italy in the 12th Century but the historians discovered that pre-Roman Etruscan civilization was making their own pasta back in 500 B.C.
Tomato came later into the combination

How to cook?

Once you are done with the mixture, form it into small meatballs. The meatballs should be roughly 3⁄4-inch in diameter. Take a medium-sized pan and heat 1 tablespoon of olive oil. Keep the heat to medium-high. Add the chopped onions, carrots and celery to the pan and saute it for 5 minutes. You will notice the vegetables are softened. Add chicken stock and chopped escarole and bring the soup to simmer. Keep it like that for some time, preferably 10 minutes. Sprinkle salt and pepper to taste.
Serving
Serve it hot with some sprinkled cheese on top.

Ingredients you need:
6 pieces of chicken thigh cut into pieces
4 tomatoes
4 garlic cloves
½ cup of Sicilian olives
1 tablespoon of olive oil
100 grams of bocconcini
½ bunch of fresh oregano

When you have gathered all the ingredients, start with preheating the oven at 180°C-200°C. Once done, chop half the oregano and break the other half into small sprigs. Transfer the fried chicken to the baking pan, add oregano, salt, pepper and the remaining oil from the frying pan. Bake it for approx 20-22 minutes.
Then add the sliced tomatoes and garlic cloves around the chicken. Take some of the pan juice and spoon it over the chicken and tomatoes. Bake for another 20 minutes until the chicken pieces are thoroughly cooked and tender. You will also notice the tomatoes have softened too. Sprinkle olives and bake for 5 more minutes. At last, add bocconcini on top of it and serve hot!

Ricotta pasta with pancetta, basil, tomatoes and spinach

1 tablespoon of olive oil
150 grams of sliced pancetta
1 chopped onion
2 crushed garlic cloves
600 ml of tomato and basil puree
500 grams pack of spinach and ricotta agnolotti

How to cook?
Take a saucepan, keep the flame medium and heat 1 tablespoon of olive oil. Add sliced pancetta, chopped onion and crushed garlic to the pan and saute for 5-6 minutes. Once the chopped onions are tender, add 600 ml of tomato and basil puree. Stir and cook it for 15-20 minutes. Turn off the flame when you notice the sauce is thick. Add salt and pepper to season it. Meanwhile, take a 500 grams pack of spinach and ricotta agnolotti and add it to boiling water. Follow the pack instructions and cook it. Drain it well, top it with the prepared sauce and grated parmesan cheese. Finally, serve it hot and enjoy!
