Lovely what one can do with a can of tuna and two potatoes! Tuna patties! Very easy to do and tasty. I added more peppers and topped it with Sriracha sauce. Perfect light lunch!

This one-pot Mushroom and Vegetable rice was perfect for the lazy mood I was in today. I altered the original recipe heavily by using Basmati rice, soy sauce instead of Worcestershire, added carrots, peppers and jalapeños and used chicken stock instead of veg and a few other modifications. I am very proud of the way it turned out!

I never thought making these English muffin-like cakes would be so easy! Gluten free and no eggs needed, Just a cup of semolina, milk, butter, baking powder, these cakes are the perfect breakfast. Fill them with anything you like! (I used date syrup and cream cheese). Yum!

Feeling cold? Have a cold? This Sausage and Veggie porridge (adapted from beef porridge here) is super comforting and tasty. Just add whatever veggies and meat you have in the fridge, short grain rice, beef stock and let it simmer for 30 mins. Best dinner I’ve had this week!

I found the recipe for this Cajun Chicken Pasta in my phone and decided to make it. I marinated the chicken for about 30 hours and added lots of spinach and mushrooms to the dish. Yums!

I finally managed to make this Chicken Mushroom Masala from a heavily altered recipe I found in my file cabinet. I added almond slivers and crushed cashews. Next time I’ll soak them before adding them in.

I was finally able to use some capers I had laying around for this Creamy Pasta with Tuna, Capers and Lemon dish! Next time, I’ll buy tuna canned in water instead of oil. The amount of olive oil the recipe called for was enough. The lemony tartness tastes even better the next day!

I finally got a chance to post this chicken with lemongrass in coconut milk recipe which I altered majorly. I only used one chicken breast, half a lemon, 3 garlic cloves, and I left out the spinach and green onions. A nice creamy lunch!

I bought a pan especially to make crepes...I know :-). Anyway, I had them for breakfast this morning. I added ginger powder and vanilla extract to the batter. I love sweet crepes so I filled one with my homemade applesauce , one with cream cheese and date syrup (dhibs, pictured), and one with applesauce and dhibs. I finished them all in a minute and a half!

This very moist and yummy Orange Cake has the be the best I’ve tasted.... not to brag! It’s gluten free, I used almond powder (pictured) and I didn’t have to use any butter. I boiled the orange for about 50 minutes before slicing it up (pictured). I prefer the almonds outside instead of baked within the cake. Sooo tasty.

I had an avocado laying around so I made my version of guacamole. I used 1/2 a tomato, 1/4 of a red onion, cilantro/coriander, a little lime juice and 1 piece of garlic. Tastes so yummy with tortilla chips, scrambled eggs and peppers!

I made 2 Iranian-inspired dishes and this is the third. I adjusted the recipe but the original is called Baghali Ghatogh, which uses fava beans instead. I also added chicken and plopped in an egg at the end (not pictured). It was simple and delicious!
