I occasionally wonder why urban gardeners don’t eat more begonias. Tuberous begonias (aka those nearly indestructible ornamental flowers you see near the edges of flower beds and in high-traffic areas) are hardy, easy to grow, and very much edible. They are gloriously indifferent to getting stepped on, watered lazily, fertilized poorly, the whole nine yards, just as long as they get full sun.
And begonias are delicious. The blossoms have a light citrusy flavor and will make your plate look zazzy as fuck. The leaves have a little more bitterness along with the citrus, and the stems can be used as a rhubarb substitute. If you lov the cronch, the whole plant has a texture bordering on a succulent. It’s like god made this plant to go in a vinaigrette or garnish a lemon tart. And yet, I see no hipsters feasting upon this instead of stealing essential grains from Bolivian farmers.
(Nota bene: begonias do have a fuckton of oxalic acid. If you lov the cronch but have gout or kidney stones, you’ll have to make your salad with something else. :( )
