Simple & satisfying lunch: my favorite combo for my favorite meal of the day✌🏻✌🏻. Recipe steps below 🍴😋 1. Slice veggies into strips. 2. Heat a nonstick pan to low to medium heat and add 1-2 teaspoons of ghee, butter or coconut oil. 3. Add veggies, and seasonings and move around with a wood or rubber spatula until tender. 4. Soft boil 2 eggs (I love instant egg cookers, they are super cheap on @amazon) 5. Mash 1/4 avocado onto 2-5 @ggfiber crackers or high fiber toasts. 6. Top toasts with chopped egg and serve with your #veggiesmost. 7.
