Lemon Salmon

Simple, but very flavourful, this Lemon Salmon makes a bright and easy lunch for two on a sunny day! Happy Monday!
Ingredients (serves 2):
2 nice pieces fresh salmon
1/4 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1/2 lemon
1 tablespoon olive oil
Preheat oven to 200°C/395°F.
Pat salmon pieces dry with paper towels, and place them in a small roasting tin.
Season with fleur de sel and black pepper, rubbing the seasoning gently into the flesh.
Generously grate lemon zest onto the salmon.
Then, thoroughly squeeze the juice of the lemon halve into a small bowl. Add olive oil, whisking until well-blended.
Brush the salmon with olive and oil mixture, and place in the middle of the hot oven.
Bake, at 200°C/395°F, for 25 minutes.
Just before serving, brush with remaining lemon and oil mixture to glaze.
Serve Lemon Salmon with green peas or Leeks.

Chilli and Paprika Chicken Breasts

Something to liven up your day with colour, flavour and spice, these Chilli and Paprika Chicken Breasts make a tasty lunch! Happy Tuesday!
Ingredients (serves 3):
1 garlic clove, minced
1 heaped teaspoon smoked paprika
1/4 teaspoon ground chilli or Cayenne Pepper
1/4 teaspoon Piment d'Espelette
1/4 teaspoon dried thyme
1/2 teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
2 ½ tablespoons olive oil
3 beautiful chicken breasts
In a roasting tin, spoon the minced garlic, smoked paprika, ground chilli, Piment d'Espelette and dried thyme.
Add fleur de sel and black pepper, and give a good stir until well-combined.
Stir in olive oil until well-blended.
With a sharp knife, score the top of the chicken breasts in a criss-cross pattern.
Add chicken breasts to the roasting tin, and rub them thoroughly with the oil, chilli and paprika mixture.
Turn them, scored-side down and cover with cling film. Place in the refrigerator, and allow to marinate, at least an hour.
Preheat oven to 200°C/395°F.
Remove cling film, and turn marinated chicken breasts scored-side up, and place tin in the hot oven. Roast, at 200°C/395°F, for 25 to 30 minutes.
Serve Chilli and Paprika Chicken Breasts hot, with fluffy white rice or sweet potatoes.

We finally got to the drag bar and my housemate had 1.5 drinks, started talking crazy and had to go outside and sit on the curb and drink water. I was like are you for real right now. It was like the mdzs crack chapters where lwj gets drunk after 1 drink.

it's that time of the month once more.........................(my prescription runs out friday and i gotta call the gp to make sure they've actually processed the next batch because at this point we're literally three for three when it comes to Not processing my prescription for Pills Keeping Me From Exploding)
