You will never believe that this quick and easy, one-pot Vegan Sloppy Joes recipe can be so flavorful and satisfying! Made with lentils and a rich tomato-based sauce, these sloppy joes are perfect for a busy weeknight dinner or a cozy weekend meal. Plus, they're packed with protein and fiber!
Ingredients: 1 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup cooked lentils. 1 cup tomato sauce. 2 tbsp tomato paste. 1 tbsp soy sauce. 1 tbsp maple syrup. 1 tsp chili powder. 1/2 tsp paprika. 1/2 tsp cumin. Salt and pepper to taste. 4 whole wheat burger buns.
Instructions: Warm up a big pan with olive oil over medium-low heat. Peel and chop the onion and bell pepper into small pieces. About 5 minutes of cooking will soften the food. It has soy sauce, maple syrup, chili powder, paprika, cumin, salt, and pepper. It also has tomato sauce, tomato paste, cooking lentils. Let it cook on low heat for 10 to 15 minutes, or until it gets thick. If you want, you can toast the whole wheat burger buns. Place the vegan sloppy joe mix on the buns. Enjoy while hot!

Lemon Chicken Fettuccine is a delightful pasta dish featuring tender chicken slices cooked in a creamy lemon sauce, served over perfectly cooked fettuccine pasta. The vibrant lemon flavor adds a refreshing twist to this classic Italian-inspired recipe, making it a favorite for both weeknight dinners and special occasions.
Ingredients: 8 oz fettuccine pasta. 2 boneless, skinless chicken breasts, thinly sliced. 2 tablespoons olive oil. 4 cloves garlic, minced. 1 cup chicken broth. 1/4 cup heavy cream. 1/4 cup grated Parmesan cheese. 2 tablespoons fresh lemon juice. 1 tablespoon lemon zest. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Follow the directions on the package to cook fettuccine until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-high heat. Mix in the garlic and cook until it smells good. Spread the chicken breasts out thinly and add them to the pan. Cook them until they are golden brown and fully cooked. Add heavy cream, lemon juice, and lemon zest, along with the chicken broth. Use a stir to mix. For three to four minutes, or until it gets a little thicker, simmer the mixture. Toss the cooked fettuccine pasta in the pan with the sauce until it is covered evenly. Add the grated Parmesan cheese to the pasta and mix it all together again. Add pepper and salt to taste. Before serving, sprinkle with fresh parsley.
