Macro-Friendly, High Protein Cheesy Chicken & Rice Burritos #shorts Frozen Cheesy Chicken & Rice Burritos Stealth Health Slow Cooker Meal Prep Series, Episode 12 When it comes to meal prepping in bulk - frozen burritos are king. This recipe makes 18 high protein burritos that you can store frozen, and reheat in just a few minutes Per burrito (makes 18): 445 Calories 32g Protein 52g Carbs 12g Fat UPDATE: I specifically used RightRice (not white rice, sounds similar in the voiceover) which cooks differently than normal rice. If you are using normal white rice - I'd recommend cooking separately (it'll be ~400g dry weight) since it seems like people are having issue fully cooking their rice in the slow cooker Ingredients: 48oz boneless skinless chicken thighs 2 taco seasoning packets 1 tablespoon lime juice 1 tablespoon chicken bouillon 15oz can of green enchilada sauce (~420g) Garlic and salt to taste High: 2-3 hours OR Low: 3-4 Hours 2 bags RightRice (I used cilantro lime) 2 cups of water 5 diced roma tomatoes 3 diced jalapeños 2 diced white onions 1 bunch chopped cilantro Juice of 2 limes 500g 0% Greek yogurt (I recommend FAGE) 150g reduced fat cheddar 120g reduced fat mozzarella If filling is too hot/not thick - place in fridge or freezer until thickened. This will make rolling burritos 100x easier. Weigh the entirety of your filling and divide by 18 to evenly distribute filling across each burrito. Reheat instructions (preferred method): Wrap in paper towel, microwave 1:15, flip and microwave another 1:15. It should be defrosted but not warmed all the way through. So yesterday was a pretty big day for me in my weight loss journey. I hit my 100 day tracking streak on the @loseitapp - I don’t think there’s been a time in the past 15+ years where I’ve consistently tracked more than 2 weeks. Simultaneously, I also crossed the 75lbs lost threshold, which is equally as huge for me. Year after year, I continually make these big new year resolutions and consistently fail to follow through. This year was different and I actually stuck with it. I’m really, REALLY stinking close to being under 300lbs… which is absolutely crazy. I’ve told myself since I started that I would start working out and going to the gym if I ever got to be under 300lbs. One of the most important things we can do is to listen to our bodies👂🕺. That’s what intuitive eating is all about! So even though we THINK we would love to eat a burger 🍔 or a donut 🍩 every single day, the truth is it could be too much for our bodies. They are wise enough to know what we need, when we need it and where’s our limit. We just have to pay attention. ⠀ Have you ever felt that you’ve eaten too much, let’s say… chocolate 🍫 , that all of a sudden you can’t even smell it 🤢? That’s what happens when we overflow ourselves with the same food; the pleasure vanishes and you just get tired of it . Even if we go the other way around! Imagine the only food you have is a bunch of vegetables 🥗. Veggies for breakfast 🥗, veggies for lunch 🥗, veggies for snacks 🥗, veggies for dinner 🥗 Well, your body will ask for something else, probably the opposite just to take a break from that eating routine. ⠀ ⠀ ⠀ In order to feel good when it comes to food, it’s essential to maintain the balance ⚖️. We have to fuel our bodies with a little bit of this 🥗 and a little bit of that 🌭. That's’ why some days you might want to eat junk food and other days you’ll prefer healthier foods instead, like veggies, fruits, proteins, and healthy fats. And it’s ok to treat yourself with carbs every now and then. The key relies on allowing yourself the opportunity to choose what you want 🌮🍎.
