High blood sugars, triglycerides, and fatty acids damage the pancreas. I’m just shy of 15 hours fasted right now but I decided that today I’m just going to eat and I’ll start my fast later tonight so for breakfast I have a half a cup Jimmy Dean turkey sausage crumbles for 2 carbs, A tiny handful of spinach, some bell pepper chopped up & two eggs. 2 #netcarbs for everything. Lots of fats. Lots of yum. Also I know I didn’t drink enough water yesterday so I’m getting on that right now!!

What are “Net Carbs?” 🤔👇🤷♀️😱 - Net carbs verses total carbs are the most misunderstood part of starting the Ketogenic diet for most people. Many people think that they need to stay under 20-30 grams of total carbs, but this misconception can cause a lot of problems with gut and microbiome health. - Net carbohydrates are the amount of carbs that are actually absorbed from the gut, make it into the bloodstream, and influence both blood glucose and gene expression. Other sources of carbs are fiber and sugar alcohols which stay within the GI tract and passed out in stool 💩. - DO NOT UNDERESTIMATE THE IMPORTANCE OF FIBER! Fiber is necessary for gut health because bulks up your stool and allows for easier passage and more consistent bowel movements. More importantly, fiber feeds your microbiome (those good bacteria that make up 90% of the cells in our body!! 🤯). These good bacteria 🦠 help set a barrier for foreign bacteria or molecules, enhance immune defense, and make neurotransmitters to help the gut communicate with the brain 🧠. Yes, your microbiome can influence your brain, which is the basis of bad bacteria (dysbiosis) causing depression, anxiety, ADHD among many other neuropsychological conditions 😲😲. - Typical recommendations for fiber are minimum of 25 grams per day for females and 38 grams per day for males. However, as most recommendations, this is not optimal. I think females should be getting 40 grams and males 50 grams of fiber per day. - Moral of the story: EAT YOUR VEGGIES! Opt for high fiber veggies like broccoli 🥦, asparagus, cauliflower, and Brussels sprouts. Other veggies are also good, but you need to AVOID corn 🌽 and carrots 🥕 due to higher sugar content. Day 2 of the Life Without Bread challenge. I aim for >72 grams of net carbs per day. I already feel lighter. The trick seems to be finding foods that are high in both fiber and fat. Macadamia nuts and almonds have been my go-to foods (especially macadamias). Other nuts will work as well; just watch out for the nuts that are higher in carbs (pistachios, cashews). This seems to be a good alternative to keto if you've tried keto and you just don't find it sustainable or you want a way to ease into trying keto. Join me for challenge.
