Healthy Rustic Vegetable Tomato Soup recipe

Warming hearts, one bowl at a time. At least that’s how it is for me. I love soup of all kinds, especially hearty and healthy ones that use your favorite seasonal vegetables. This soup is a hit! Packed with flavor and perfect for that cool winter night.
Ingredients
1 tbsp extra-virgin olive oil
3 cups organic chicken stock
1 15 oz. can organic diced tomatoes
2 tbsp tomato paste
1 clove garlic, crushed
1 onion
1 cup green beans, chopped
1 onion, chopped
1 zucchini, chopped
3 carrots, chopped
2 celery stalks, chopped
1 cup mushrooms
1 cup cauliflower, chopped
1 handful fresh spinach, chopped
Optional: 1 sweet potato or 3 small purple potatoes, chopped
1 tbsp oregano
1 tbsp basil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp red pepper flakes
Himalayan sea salt
Freshly ground pepper
Instructions
Heat oil and crushed garlic in a large pot
Chop all veggies
Saute onions, carrots, purple potatoes, and celery for 8-10 minutes, stirring often
Add in remaining vegetables (except for spinach) : green beans, zucchini, mushrooms, cauliflower and let cook for 7-10 minutes, stirring often until translucent
Add in broth, diced tomatoes, tomato paste, and spices
Bring to a boil then reduce heat and let simmer for 45 minutes-1 hour
Taste and adjust spices as desired
Serve hot and store in tupperware
