Spinach and mushroom smothered chicken Ingredients 6 oz bag raw spinach leaves 2 oz cream cheese, softened 2 cloves garlic, minced (I use 2 frozen garlic squares because you don’t have to bother mincing the garlic yourself) 8 oz baby bella mushrooms 2 tsp garlic powder 2 tsp salt 2 tsp ground thyme 4 chicken breasts 4 slices mozzarella cheese, reduced fat Spinach and Mushroom Smothered Chicken 1. Preheat oven to 400. Sprinkle 1 tsp garlic powder, salt, and ground thyme on one side of the chicken breast. PAM a 9 x 13 glass casserole dish. Place breasts seasoned side up in the casserole dish. Bake uncovered for 15 minutes. 2. If using frozen garlic, melt the garlic squares over medium-high heat in a large skillet. If using fresh garlic, mince the garlic cloves, lightly PAM the large skillet, and cook garlic over medium-high heat for 1 minute. 3. Remove the stems from the spinach and add leaves to the skillet one hand-full at a time. The spinach reduces significantly when it wilts. Cook until all leaves are wilted, about 10 minutes, stirring occasionally. Add the cream cheese to the wilted spinach and stir until melted. Remove from heat. 7. Gently wash the mushrooms and remove the stems. Slice the caps into 1/4 inch wide slices. Add the mushrooms to a large skillet and season with 1 tsp garlic powder, salt, and ground thyme. Cook over medium heat until browned, about 7 minutes, stirring occasionally. Remove from heat and combine with the creamed spinach. 5. Remove the chicken from the oven and flip the chicken over. Divide mushroom and spinach mixture over each chicken breast. Cover the chicken with one slice of mozzarella. Cook another 10 minutes or until cheese is melted and chicken is cooked throughout. This was so yummy! Gotta try this one out! Creamy Tuscan Garlic Chicken Lean & Green Prep Time 10 minutes Cook Time 10 minutes Total Time 20 minutes Servings 3 Ingredients 1 1/2 lbs boneless skinless chicken breasts, thinly sliced 1 T olive oil 1 C low fat plain greek yogurt 1/2 C Chicken Broth 1/2 tsp garlic powder 1/2 tsp italian seasoning 1/4 C parmesan cheese 1 C spinach, chopped 3-6 slices sun dried tomatoes 1 T diced garlic or 2-3 cloves Instructions In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the yogurt, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan and serve over zucchini noodles if desired. SHRIMP "RISOTTO" Ingredients: 1 1/2 cup cooked, grated cauliflower (3 Greens) 7 oz peeled, tails removed, cooked shrimp (1 Lean) 1 tbsp Land O' Lakes light butter spread with canola oil (1 Healthy Fat) 2 light garlic and herb Laughing Cow Cheese wedges (1 Healthy Fat) 1 garlic clove, chopped (1 Condiment) 1/4 tsp salt (1 Condiment) 1/8 tsp black pepper (1/4 Condiment) 1/2 tsp dried parsley flakes (1/6 Condiment) 2 tsp grated Kraft Parmesan Cheese (2/3 Condiment) Preparation: Cook cauliflower. I used frozen cauliflower. Follow the cooking instructions on the back of the package. Drain. Use a food scale to measure out 270 grams of cauliflower, since 90 grams of cooked from frozen is 1 Green. If you are cooking fresh cauliflower, measure out 186 grams, since 62 grams of cooked from fresh is 1 Green. Place cooked cauliflower in a food processor and shred using the shredding disk. Place in a medium sized bowl and set aside. Thaw out cooked shrimp from bag. Peel and remove tails if necessary. Weigh out 7 oz of shrimp and set aside. Directions: In a medium sized skillet, melt butter and add garlic. Saute garlic in butter until they turn light brown, a few minutes over medium high heat. Lower the temperature to medium heat and add the wedges of laughing cow cheese. Stir until slightly melted. It is okay to have some lumps. They will blend nicely with the rest of the ingredients. Add the shrimp to the laughing cow cheese mixture and then add the grated cauliflower, parmesan cheese, and salt. Stir until combined. Heat for about 3 to 4 minutes or until heated thoroughly. Sprinkle parsley flakes on top. Enjoy! 1 Serving 1 Lean, 3 Greens, 3 Condiments, and 2 Healthy Fats per Serving

New Years resolutions are around the corner. The average person quits on their resolutions by Valentine’s Day. The most popular excuses: 1. Life’s too hectic. 2. Will start again after the holidays. 3. It’s too cold out. 4. Cost too much 5. Lost motivation because your partner stopped his resolutions 6. Just dont have the time for it! Yes I said it twice in two different ways. Time management, dedication and doing it alone is usually the biggest issues. Eating healthy isn’t any more expensive then what your doing now. Add up all your prescriptions, doc appointments, food, takeout, loss of work and what you spend on cable tv. It’s actually way more then getting healthy and staying healthy. SUNDAY BRUNCH BAKE Ingredients: 6 eggs Eggs, Whole 1 cup Morningstar Grillers Recipe Crumbles 1/2 cup Raw Mushrooms, Portabella 1/2 cup Raw Tomatoes 4 oz Cheese, cheddar, reduced fat, shredded 1/3 cup Raw Onion 5 sprays Non-stick Cooking Spray Preparation: Additional Ingredients: 3 Tbsp. Plain low-fat Greek Yogurt 1. Prep the ingredients: Chop the mushrooms, onion, and tomatoes. 2. Beat eggs and Greek yogurt with whisk until well blended. 3. Pour mixture into greased 8x8” baking dish. 4. Bake at 350°F for 10 minutes, until egg mixture is softly set. 5. Meanwhile, cook recipe crumbles, mushrooms, and onions in large skillet on medium heat for 6-8 minutes, until crumbles are done. Stir occasionally. 6. Drain once cooked. 7. Reduce oven temperature to 325°F. 8. Spoon tomatoes over egg layer. Cover with recipe crumbles mixture and cheese. 9. Bake 30 minutes until center is set. EGGPLANT SKILLET Serves 4 Per serving 1 Lean protein 2 vegetables 2 condiments 1 Âź lb ground beef 1/4 cup chopped onion 1/4 cup chopped celery 1 8oz can (1 cup) tomato sauce 3/4 cup water 1/2 - 3/4 tsp oregano 1/2 - 3/4 tsp chili powder 1 small eggplant (about 1 lb) cut into 1/2" slices 4 ounces of low fat cheddar Cheese 1 tsp Paprika Cook beef, onion and celery until meat is browned. Drain off excess fat. Stir in tomato sauce, water, oregano and chili powder. Season eggplant slices with salt and pepper. Arrange on top of meat sauce. Cover and simmer on low until eggplant is tender, about 25-30 minutes. Add more water to the side of the skillet if it seems the sauce is getting overcooked. Remove from heat. Top with cheese and sprinkle with paprika. Cover for a few minutes until cheese is melted. #ahnnashealth #optaviahealthcoach
