Garam Masala in the making- my moms secret blend of the best Garam masala or meat masala taught to me by my aunt. I got a little (actually, a lot) carried away with the use of black cardamom. My aunt kept aside 12 of them out. Also, only 1/2 a nutmeg was used. These spices were dry roasted in a deep bottomed pan, cooked to room temp and then finely powdered. The aroma from the freshly ground Garam masala is SO good, the whole house was filled with this gorgeous smell. I can’t wait to make a chicken curry and use this spice blend! Nothing like fresh market produce. The ‘bhindi’ (okra/ladyfingers) is my all time fav veggie (top left) to eat with dal and rice. I love my bhindi cooked in a very simple manner. It’s how my mom made it for me throughout my childhood. The recipe is as follows- 1.Okra/bhindi- 2-3 cups, sliced-roughly 1/8 inch 2.Oil-1 tbsp (any vegetable oil) 3.Salt-2-3 pinches 4.Turmeric powder-1/2 tsp 5.Green chilli- 1, slit in half (you can remove the seeds if you don’t want the spice-you need the freshness it brings to the dish) . . . Preparation: 1. Place pan on medium heat, add the oil and when it starts to smoke a little add the sliced okra. 2. Sauté for 1-2 minutes, add the salt, turmeric and the green chilli and mix again. 3. OK, now for the pro tip-add 1 tbsp of water to the okra, mix well and place a lid on it. Th okra when cooked reduces in size (a lot) so cook it with the lid on for 2-3 minutes only. 4. Open the lid, sauté the okra-if it’s gummy-it’s not cooked. You are looking for the okra to be cooked fully. 5. -Base of the traditional Hyderabadi Dum Chicken Biryani. I have seen the cooks at home (in Hyd) cook chicken biryani a million times but I never paid much attention to the exact quantities and measurements. I am told the secret to a delicious and properly made biryani actually lies in the base-the masala! . . . Here, in this picture the chicken is already added to the yogurt-spice masala. The chicken is not merely coated in the masala-it is swimming in the spicy yogurt base. Not only will the extra liquid from the yogurt make the chicken very tender and soft, it will also provide enough moisture to cook the rice. The cook added 40% cooked rice in first layer, 60-65% cooked rice in the next layer and about 75% cooked in the last. . . . After the last layer is added, a lid is placed on the cooking vessel and then a heavy stone is placed on the lid (to make sure the steam building in the cooking vessel doesn’t escape)These are all approximations and he said only with practice one can truly master it. Gongura leaves- I first tasted #gongura in a pickle form, back in 2010-I was doing my MSc in Sheffield, UK. I had many friends from #hyderabad, India and they wouldn’t shut up about these leaves and gongura dal and gongura mutton, gongura this and gongura that! I just had to try it. To be honest, initially, I couldn’t understand the hype around it but gradually, I found the sour and tangy taste of these leaves comforting and pretty darn delicious. Hot white rice, ghee on top of it and a delicious gongura mutton curry. (Droooool) . . . Although these gongura leaves are available in other parts of India, its quintessentially an Andhra dish. The leaves here are quite tangy and sour, and that is because this area is really hot during the summer. ‘Gongura Pappu’ (lentils cooked with gongura leaves) and ‘Gongura mamsam’ (gongura cooked with mutton/meat) are my two favourite gongura dishes.
