So, I owe money to the company I work for.

At the end of the week, I will have the amount of a day less of my salary, plus, I have to pay the amount of One day and a half of my savings.

And as if it wasn't enough, I have an irritated colon for the anxiety and nervousness of being the cashier at my job.

Some disclaimers here:

Many Mexican dishes have tortilla, beans and salsa.

The type of cheese is different in many of them.

The chicken is optional. You can change it for beef, chorizo, longaniza, or even eggs.

There are different types of salsa.

Green salsa (made with green tomatoes)

Red Salsa (made with tomatoes)

Mole (there are many types of Moles, so, it depends where you live, the type of mole that you prepare)

For example, "the sope" is a flat tortilla with beans , lettuce or nopales and white fresh cheese on the top. The creme and the salsa in many cases are optional, not all the people like creme, and every person decides the salsa that they want to put on the sope. The chicken or other meat are cooked in different ways.

Chilaquiles are fried tortillas cut in triangles, (similar to the nachos tortillas), covered with salsa, creme, and melted cheese. The beans are a garnish to accompany. Most of the time, have chicken, but this is one of the cases when you change the chicken for beef or other meat. The salsa can be green salsa or red salsa.

The flautas are fried tacos, filled with chicken, beef or mashed potatoes. The flautas have lettuce, cream and cheese on the top. Again , here the beans are a garnish.

And there are some dishes that are similar.

Sope is made with round tortillas, but there are the Huaraches, that are made with long oval tortillas. And even the "Petroleras" that are huge flat round tortillas. All of them are prepared in the same way.

Yeah, many Mexican dishes sound similar, but they have different textures.

I'm Mexican and I worked till some months ago in a kitchen preparing sopes, huaraches, quesadillas , tacos and other dishes.

For the last , I want to share my favorite dish

"Enchiladas suizas".

They're made with folded tortillas, filled with chicken, a creamy green salsa (green salsa mixed with cream), and with beans as a garnish.

This dish was an adaptation of the "Enchiladas" created for Maximilian of Habsburg during the 2nd Mexican empire.

So...

After two months and a half of being in a formal job, I'm going to return to my tarot services on weekends.

I think at a good point where I can go to work 6 days of the week and use the half of the weekend to make tarot readings online.
