This traditional recipe for sushi rolls is great for both newcomers and sushi fans. It's easy to make at home and tastes great. It's made with sushi rice, nori seaweed, fresh fish, and vegetables.
Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/3 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. 4 sheets nori seaweed. 1/2 pound sushi-grade fish such as tuna or salmon, thinly sliced. 1 avocado, sliced. 1 cucumber, julienned. Soy sauce, for dipping. Wasabi, for serving. Pickled ginger, for serving.
Instructions: Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 18-20 minutes, or until the rice is tender and the water is absorbed. In a small bowl, mix the rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds, stirring until the sugar and salt are dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture, being careful not to mash the rice. Let the rice cool to room temperature. Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top. Arrange slices of fish, avocado, and cucumber in a line across the center of the rice. Roll the sushi tightly using the bamboo mat, sealing the edge with a little water. Slice the sushi roll into 6-8 pieces using a sharp knife. Serve with soy sauce, wasabi, and pickled ginger.

Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 2 tablespoons matcha green tea powder. 4 large egg yolks.
Instructions: Over medium-low heat, stir the heavy cream, whole milk, and matcha green tea powder in a saucepan until it starts to simmer. Mix the sugar and egg yolks in a different bowl until they are light and fluffy. Slowly add the hot cream mixture to the egg mixture while whisking it all the time to temper the eggs. Put the mixture back in the saucepan. Cook over low heat, stirring all the time, for about 5 to 7 minutes, or until it gets thick enough to coat the back of a spoon. Take the mixture off the heat and use a fine-mesh sieve to get rid of any lumps. Pour the mixture into a clean bowl. Cover the bowl with plastic wrap and press it right on top of the custard to keep a skin from forming. Put the custard in the fridge until it is completely cold, preferably overnight. Once the custard is cold, use an ice cream maker and follow the directions on the box. Move the ice cream that has been churned to a container that can go in the freezer. Freeze for at least 4 hours, or until it is firm. Serve and have fun!
