I did a quick search to fact check this 'cause, you know, sounded wild enough that I wanted to verify. & actually, I feel like this post UNDER sells this phenomenon.
First off, the cinnamon birds (or cinnamolgus) apparently produce the cinnamon directly. Instead, they use cinnamon to build their nests, which only they are able to source. Where they get the cinnamon ranges from it being the fruit of the cinnamon trees that they build their nests in to them gathering it in an unknown land that may or may not be on this plane of existence.
Also, not only can cinnamon solely be acquired by stealing nests from giant fearsome birds, said nests are found in extremely inaccessible places & require retrieval through specialized retrieval techniques.
When built in trees, they are at the top of cinnamon trees that are described as incredibly tall with limbs so fragile, none can support the weight of any humans. (These are the accounts where the cinnamolgus are using cinnamon tree fruit for their nests, so presumably the fruit is only found on the uppermost branches where the nests are?) So the gatherers would shoot lead weighted arrows at the nests until they manage to knock one out of a tree, & then gather the cinnamon fruits from the fallen nest.
When the cinnamolgus are gathering the cinnamon from an unknown land people cannot know or reach, they build their nests on tall, sheer cliffs that cannot be traversed by humans. So in order to get the cinnamon, people will place hunks of meat as large as possible along the base of the cliff & leave it for a while. The birds will come down to gather the meat & take it back to their nests, but the mud holding said nests to the cliff face can't support the weight of the meat & will give out. People then come back later & collect whatever nests have fallen within reach.
The first account I mentioned, with the cinnamon trees & their fruits, comes from the Rochester Bestiary in 1230 CE. The second is from Herodotus' Histories from 430 BCE. That's a 1660 year time span, just from the credible sources I found on the first couple pages of google results. "Centuries" doesn't immediately convey the scale we're looking at; it seems likely this went on for at least a couple of millennia.
& honestly? Good on 'em.
One of my favorite historical tidbits is that Arab traders, for centuries, fooled Europeans into thinking cinnamon came from a rare, vicious and fearsome cinnamon bird.
The belief was so prevalent, in fact, that the mythical cinnamon bird shows up in the writings of Herodotus and Aristotle, all the way into medieval European manuscripts where it’s illustrated in all its fierce, cinnamony glory:

Pliny the Elder expressed skepticism of the bird in his writings, rightly assuming that it was a tale invented to keep control on the trade and prices by reducing competition, but the belief was already so widespread that it persisted in many areas into the early 1300’s.
