Hello Tumblrs,
It’s that time of year where we start to get swept up in the excitement that is Christmas, sometimes this can be all consuming and overwhelming, even if you like me and love Christmas, the excess of it all can be a bit much. Over the last few year I have started to relook at the way I embrace Christmas and all the trimmings that come with it by trying to buy with, not only the person in mind but how I can minimise the impact on the environment of my gift giving. This has naturally flowed into my business Athella Tea as I wanted my brand to be a gift that had a purpose that brought enjoyment (a cuppa) but that also could be completely enjoyed for weeks on end and then disposed off in a way that it would be able to completely breakdown in our environment.

This is why our team at Athella decided to not have teabags with tags, strings and staples. Yes it would have been great for our brand awareness to have a tag, to remind you that it was us Athella Tea, that created the delicious brew you were drinking but caring for our planet and showing our children how we could make a difference, if only a small simple change, could accumulate to have a powerful impact.

While at Athella we mainly drink Loose Leaf, because Loose Leaf rules and our gardens love our used tea leaves. Tea farmers are picking spring tea. For green tea, the quality of spring tea is the best, so if you want to drink tea, it is better to drink spring tea. The benefits of spring tea are as follows: 1. The nutrient accumulation of spring tea is the thickest. In autumn and winter, organisms are in a state of accumulation and storage. While spring tea is recuperating, it stores abundant energy. In addition, the temperature in spring continues to maintain a low temperature state, and the consumption is very small, which makes the nutrients in the body of the spring tea more abundant, and the appearance of the buds and leaves is plump, the color is green, and the leaves are soft. 2. The aroma of spring tea is fragrant and long-lasting. Flowers are “live” because of their fragrance, and tea is “expensive” because of their fragrance. Just bid farewell to the early spring of winter, the temperature is not high, and the aroma substances are preserved in a good environment, so the aroma of spring tea is incomparable to other seasons of tea. 3. We've all been there; We boil the kettle, then get distracted [washing, kids, the dishwasher], and when we finally get back to making our cup of tea, we feel like we need to reboil the kettle..
Well we're here to tell you that reboiling the water isn't something that will result in a luxurious and beautiful brew. Why... We'll tell you...
The tea connoisseurs of the world firmly stand by the fact that reboiling water to make a cup of tea will result in a less flavourful brew. And no one wants that! This is because boiling water removes oxygen.
From a health, safety and scientific view, the theory of concentration and evaporation is that when we boil water, some of the water will evaporate, which can leave a higher concentration of chemicals in the water. [Those that are already found in the water source, though, of course, like nitrates, fluorides etc.] So it does really come down to the quality of water you start with.
Our recommendation is not to reboil your water when it comes to making a beautiful brew because if you get a moment to make a cup of tea, you deserve to enjoy it at its very best too!

Personally I love the ritual of a cup tea, filling up the kettle, picking out my favourite cup and carefully selecting a herbal blend to add to my tea strainer. Today I have needed some Calm and with medicinal botanicals, like lavender, chamomile and rose, to help me relax and unwind, it was the perfect choice. A cuppa tea, a walk, meditating and a good laugh with friends are my go to rituals to help with lifting the feelings of stress and anxiety. What are yours?
