Took some tome off to relax and recharge last month 😴 Started doing #Hotyoga this week to get back into the swing of things ! I've been making these crispy fish Spring rolls to eat before and after Because they are light & tasty...I'm going to start making more and taking them to work ☺ *Pre- heat your oven on "BROIL"* 1) Take yor favorite fish ( I used frozen basa fillets ) 2) take a SMALL amount of oil and rub both sides of the frozen fillet so that it's lightly coated ( I used 3/4 of a table spoon of avocado oil for 3 large fillets ) 3) Sprinkle a pinch of salt onto the fillets an put them in the oven on the top rack for 15mins 4) When they start to brown, take them out and drizzle apple cider or balsamic vinegar on each fillet, then back into the oven for 15-20mins ( or until it's crispy enough for you) 5) Fill a fryin pan with hot water ( you don't have to boil it but it should be pretty hot) dip the rice paper wraps in the water until they get soft but not for too long or they will start to clump up. Lay each wrap flat on a plate and lay your fillings on top starting with the large lettuce leaves. Start wrapping from one edge of the rice paper to the other as if you were rolling up a carpet. For filling, I like to use a lot of greens : lettuce, spinach , arugula etc some green onion and avocado but Pretty much anything you can put in a sandwich works Lol Dipping sauce: I haven't tried too many sauces but I like soy sauce/apple cider vinegar/ honey (tiny bit) ☺ The wraps are small rice paper wraps, I got them near the soy sauce and other rice noodles. they come in a pack that looks like a frisbee.
