These almond donut cookies combine the flavors of almond and coconut for a delightful treat that's low-carb and gluten-free. The sliced almonds add a nice crunch, and you can even drizzle them with dark chocolate for an extra touch of decadence.
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup erythritol or sweetener of your choice. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/4 cup unsalted butter, melted. 1 large egg. 1/2 teaspoon almond extract. 1/4 cup unsweetened almond milk. 1/4 cup sliced almonds. 1/4 cup powdered erythritol for coating. Optional: melted dark chocolate for drizzling.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt. Add the melted butter, egg, almond extract, and almond milk to the dry ingredients. Mix until well combined. Fold in the sliced almonds into the cookie dough. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet. Gently press down the center of each cookie to create a donut-like shape. Bake in the preheated oven for about 12-15 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are cooled, lightly coat them with powdered erythritol by rolling them in it or dusting it over the top. Optional: Drizzle melted dark chocolate over the cooled cookies for extra flavor and decoration. Allow the chocolate to set before serving or storing the cookies. Enjoy your delicious almond donut cookies!
