Ancient Barbeque
Barbeque or BBQ is a unique cooking method but it is also a great way to get your friends and family together for an outdoor meal! No one would argue that BBQ is an American past time but how far back does this tradition go?
Israeli scientists from the University of Haifa discovered Barbeque 200,000-year-old evidence of early human beings living in the Carmel region. This tribe was focused on larger mature animals and cuts of meat with loads of muscle, based on bone and tool evidence. They would often leave the heads and hooves of the game they killed, Game they preferred to hunt include boars, cattle, and deer.
Curiously, the first-ever known design of a BBQ can be found in the Hebrew Old Testament. First written around 1300bc and 1500bc, defining a 4 foot high and 7 foot long BBQ design that included meat hooks, fire pans, grates, shovels, and tie-downs.

Types of Beef Ribs Beef ribs are the least known and under-appreciated cuts of meat. They’re super rich, and drenched full of flavor and are fairly easy to prepare and cook.
Baby Back Beef Ribs Beef back ribs are large, you may even have heard them referred to as dinosaur ribs. They are the large bones not used in a prime rib roast. Due to their massive size its common to cut them into single size portions. Coat these in your favorite rub and prepare your tastebuds for a tender cut of beef.
Short Ribs These ribs are cut from the shoulder and are rectangular in form. These are full of collagen and flavorful fat so need a similar treatment as brisket. This cut is best cooked slow and low, a smoke will get the best results but wrapping them in foil and cooking for a few hours in the oven is also delicious.
Flanked Style Ribs Flanked ribs come from a similar area of the cow to short ribs. They are cut lengthwise across the ribs rather than straight down between the ribs. These contain a lot of mean but you have to deal with multiple bones. These ribs are unique due to the placement of the bone, best used in a stew or braised.
Buying And Storing Tips Beef is typically a purple-red color, but when exposed to oxygen it takes on a red color saturation known as the “bloom.” The outside of the meat is bright red, while inside the meat will appear darker color.

Barbecue islands are the centerpiece for any outdoor kitchen. The less expensive option for barbecue islands is stainless steel, which works well and will hold up well year round. One of the big drawbacks of stainless steel is that it can be tricky to keep clean and smudge free. A better option for the built-in barbecue structure is using concrete or steel to build the frame, and then using Dekton brick panels to wrap and protect the barbecue island. Wood is another popular option for outdoor kitchens, however; wooden structures, cupboards, and furniture combined with the desert heat do not traditionally mix well. The sun will dry and crack wood unless great care has been taken to protect it. Stick with a steel or concrete frame and the barbecue island will last years longer.
Top off the outdoor kitchen
The two most commonly used countertop materials are poured concrete and granite. When it comes to outdoor kitchens, the countertop will make or break a design. Granite comes in ‘levels’ of patterns and quality. A level 1 granite will have a less notable pattern and color style than a level 3 granite. Having an outdoor kitchen countertop that is very durable and easy to clean cannot be understated. Granite is the best option for durability and stain resistance. Granite countertops are non-porous and will resist stains from spilled food and drinks.

In the Las Vegas valley, our straight layout barbecue island eagerly awaits the first party! Our customer wanted something sharp and clean and with excellent functionality. This barbecue with a view really does the trick. We started with a Traeger Timberline 1300 professional wood pellet smoker because it has the capacity for smoking enough food for a small crowd. We then added a Lynx 30″ professional grill with all Trident Infrared Burners + Rotisserie. Having a large capacity outdoor smoker combined with a large capacity searing grill is something right out of a barbecue fantasy! When our client asked for a small beverage refrigerator that was above the standard, we gladly added a True Refrigeration 24″ Beverage Center with a very sharp looking glass door.
The entire barbecue island is wrapped in Arctic White stacked stone which contrasts perfectly with the Dekton Radium countertop. The barbecue island has a 30″ access door under the Traeger 1300 smoker/grill plus a 30″ combo drawers/access door. All installed with upgraded trim kits for a quality look and finish. Not only do these appliances come together in an aesthetically pleasing way, the Dekton countertop will ensure that this barbecue island will last for years!

Follow up with Stainless Steel polish on the exterior surfaces. Once the barbecue has been cleaned, rub vegetable oil on both sides of the grates before installing them back into the grill. Heat the barbecue to 500 degrees for about 20 minutes. The grates should be black or brown and will be well seasoned for the next use. Keep the barbecue vents closed while not in use to keep the grill interior protected from dust and the weather.
Winterize Cabinets
Remove any items stored in the outdoor cabinets. If you have wooden cabinets in your outdoor kitchen, Winter is the perfect time to oil or seal the wood to keep moisture and weather from penetrating the wood. For those who have stainless steel cabinets, use stainless steel polish on the exterior to keep moisture off the surface.
Water Line Maintenance
If your outdoor kitchen includes a sink, refrigerator, or any other water plumbing, it is important to shut off the water lines during freezing weather. Water expands when frozen and leaving water in the lines can damage the plumbing as it expands. After shutting off any water lines that feed into the outdoor kitchen, you will want to drain the water lines to prevent damage. Once the water is shut off with the lines bled, open the drain valves and leave them open for the Winter. This step helps prevent water and moisture from becoming trapped inside the affected appliances and fixtures.
Sink Maintenance
After shutting off the water valves to the outdoor kitchen appliances and fixtures, open the cold and hot water valves and leave them open. This step will prevent water in the pipes from causing damage if frozen. People in areas that freeze over for much of the Winter choose to completely remove the faucets from their outdoor kitchen for the Winter season however this is rarely needed in Southern Nevada. Shutting off the water lines and draining the lines while leaving the faucet valves open is typically good enough. If water comes out from the faucets, check the source water line and ensure that it is fully closed. Use stainless steel polish to keep the sink in good condition.
Refrigerator and Ice Maker
Turn off the refrigerator and unplug it. Remove any items in the fridge and clean the interior with mild soap and water. Remove the toe plate and vacuum any debris from under the refrigerator. Reinstall the toe plate. Due to issues with moisture build-up, covering the fridge for the Winter is not recommended. Wipe and polish the surface with stainless steel cleaner or another conditioning cleaner that works with the appliance material.
