GARLIC HERB CRUSTED RUMP ROAST

Rump roasts are a very lean cut of meat from the round (rear leg) portion of a beef. This oven roasted recipe will give a flavorful finished product to cut into slices for lean delicious roast beef sandwiches or a healthy dinner option.
INGREDIENTS
4 lbs Beef Rump Roast
4 clove Garlic ( minced)
4 tsp Olive Oil
4 tsp Salt
2 tsp Pepper
2 tsp Thyme ( dried)
2 tsp Sage ( dried)
1 tsp Parsley ( dried)
DIRECTIONS
Combine all ingredients except roast in a small bowl and mix together until combined. Rub this mixture over all sides of the beef roast.
Place the roast on to a tray placed in a roasting pan. Place in an oven preheated to 325°F and roast for 1.25-1.75 hours until the roast reaches 145°F for medium rare or 160°F for well. Remove and let sit for 15 minutes – the temperature will rise about another 10°F while resting.
RECOMMENDED PAIRINGS
CABERNET SAUVIGNON - Cab is king, and for good reason! This grape produces big, full bodied red wines that are a go to for many people, and it is fabulous with roast beef. I’ll be finishing the meal with a sweet Pink Catawba, for dessert, from Stone Villa Winery, in Acme Pa

Summer Memories
Who's father had the fire hydrant wrench? Remember sitting on the stoop? Mister Softee, Rose's Water Ice, Connie Mack Stadium. Frank's Black Cherry Wishniak soda and a Philly Pretzel from some guy on the corner.

The home I was born in was in Feltonville, a row home on a small street. Hot day Mr. Ranson always turned on the fire hydrant. Not many kids had bikes, they were expensive, so i had a scooter.

Miss those day. But, it was a long, long time ago. Stepball, wireball, halfball, watching a Popsicle stick float down the stream from the fire hydrant after it was turned off by the police.


Answer to Questions:
Before it was Connie Mack Stadium, it was Shibe Park. Besides the Philadelphia Phillies the Philadelphia Athletics also played on this field, It opened April 12, 1909
Frank's was sold way back in 1990 and the brand pretty much disappeared from the mainstream after that.
