Weekend Hashtag Project: #WHPthankful

Weekend Hashtag Project is a series featuring designated themes and hashtags chosen by Instagram’s Community Team. For a chance to be featured on the Instagram blog, follow @instagram and look for a post every week announcing the latest project.

This weekend, the goal is to take photos and videos of the people, places and things you are most grateful for in your everyday life, as in this featured photo by Natalie Chitwood (@natchitwood). Here are some tips to get you started:

Trinbago Fresh Green Seasoning

Growing up as a child in Trinidad, I always knew that my mom’s bi-weekly trips to the local market meant nothing more than I had work to do….

You see one of my mom’s favourite things to do on a weekend was to whip up a batch or ten of fresh green seasoning which she would judiciously distribute among family, friends, neighbours or collegues alike. She grew up in the Central Trinidad & at her home there was always an abundance of herbage, fruits, fauna & flora; her love of which she has transferred to her three girls.

So after being asked for the hundredth time to do some of my mom’s green seasoning that I’m ALWAYS talking about; I decided that to do it in this blog would be the best way to share the knowledge she gave to me.

Ingredients:

1 bunch cilantro (leaves & young stems)

3 bunches culantro ( aka bandhania or shado beni)

1 bunch parsley

1 bunch sweet basil

1 large head of garlic, peeled

2 large onion, peeled & chopped

1 stalk Chinese celery

1 stalk regular celery

½ cup marjoram

8 scallions (aka green onions, also called “chives” in Trinidad)

8 pimento peppers (left whole but destemmed)

½ red sweet pepper, seeded

½ green sweet pepper, seeded

1 cup fresh thyme leaves ~ Broad leaf or Spanish or Common thyme (remove stems)

2-3 whole Habanero, Congo, Scotch Bonnet or Small Bird Chili (10-20)

Water

 Wash, drain & roughly chop all herbs & other ingredients you are using. 

   Place all ingredients in a blender and food processor and puree until fine. Water is not required in a food processor, but add just enough water to blend in the blender. Scrape down sides and pulse again. 

  Place in a sterilized glass jar, close tightly and store in the  refrigerator. Will stay 1-2 weeks (sometimes I keep it up to a month in the refrigerator).

  The color will vary depending on the combination of ingredients used.
