Shrimp, Blueberry & Feta Salad with Walnuts & Lemon Vinaigrette
This recipe came from a new app I am trying out called Mealime.
It was yummy for sure. It is also on the lighter side. Which I like since I usually eat a lot of heavier meals.
Ingredients:
2 (6oz) pkgs blueberries
1 (4oz) pkg Crumbled feta cheese
1 Lemon
1 ½ Raw peeled shrimp
1 (5oz) pkg Spring mix
½ C Walnuts
black pepper
Dijon mustard
Extra virgin olive oil
Honey
salt
virgin coconut oil
Instructions:
1 Grate all the lemon zest from the lemon, then juice the lemon; transfer both to a small bowl.
2 To the lemon zest and juice, add olive oil, Dijon, honey, salt, and pepper; whisk together. Set aside.
3 Roughly chop the walnuts and transfer to a small bowl
4 Preheat a skillet over medium-high heat.
5 Lay shrimp out on paper towel and pat dry.
6 Once skillet in hot, add the walnuts; cook, stirring constantly, until they are lightly browned, 2 to 3 minutes. Once done, return to the bowel.
7 Once walnuts have been transferred, add coconut oil to the skillet and swirl to coat the bottom.
8 Add the shrimp to the skillet; cook until they are opaque, 1 to 2 min per side. Once done, transfer to a bowl and set aside.
9 To serve, divide the mixed greens between plates, top with the blueberries, shrimp, feta, and walnuts and drizzle with the lemon vinaigrette. Enjoy!

I first came across these Cinnamon stars a few years ago. We always have lots of biscuits in the house around christmas, but these weren’t around for long and I managed to get through a whole box in about half an hour. It’s a good job I’ve got a recipe for them now.
Base -
450g Plain flour
1 Tsp Baking Powder
250g Butter 150g Caster sugar
Topping -
Demerara Sugar
Cinnamon
Icing Sugar
In a large bowl cream together the sugar and butter then whisk in the egg.
Sift in the flour and baking powder. Knead the mixture together until it forms a dough.
Wrap in cling film and place in the fridge for an hour to bring the mixture together.
Pre-heat the over to 200 degrees, gas mark 6.
Roll out the dough to around half a cm thick.
Using a star shape cutter cut the dough, you should get about 30 stars. Place on a baking tray lined with baking are and bake for 10 minutes.
Before placing in the oven you can which your second egg and lightly coat the biscuits, them sprinkle cinnamon and sugar on top and bake.
Alternatively bake the biscuits plain and make a icing with icing sugar and cinnamon to drizzle over the top.
Allow to cool and store in an air tight container ! They’re lovely to wrap up in bunches of 6 -12 and give away as gifts or to just have around the house at Christmas

Fitness Journey 2017 February & March
I made a post at the end of January about how I had taken up yoga and given up caffeine / binge habits... still all true and going strong ! I've taken up another yoga challenge, #StretchRevolutionChallenge 😻👌 it's a challenge alright ! Hahaha I post on my Instagram every day about it. My Fitness Journey 2017
Hello 2017, In January, well actually December because I'm not a resolution-er as much as I am always looking for a new and improved fitness routine, I gave up coffee and whatever negative habits I recognized in my everyday life. - no coffee = no donuts - no binge watching Netflix/ CraveTv = more exercise/ activities - mindful eating = less binge eating After 1 week of my new mindful routine I started to feel great. I added a 30 day yoga challenge, and I am sad to say those 30 days are coming to an end. I feel like at LEAST 1 million dollars, and here are some changes I've noticed in myself: -What shifts or changes did you notice physically? My balance is so much stronger, not to mention flexibility. Balance was the #1 improvement overall. -What shifts or changes did you notice mentally? More positive, sending more positivity to my friends and acquaintances. When faced with stress or negativity I am able to revert back to the bliss of my practice and draw from there to move on. -What challenges did you overcome? Mostly just my previous bad habits! Haha poor concentration, laziness, tiredness, lack of commitment to myself and my body. -Did you have moments where you surprised yourself? I like pigeon pose now, that's surprising! AND I can reach back to grab my foot which was never easy before. -What did you learn about yourself? I am mindful, I am strong, I am a yogi. -What are your yoga practice plans after the Challenge? I will continue to do yoga every day, at home with YouTube videos, in studios with friends (for the social aspect) I want to continue to grow. 1/12 healthy months so far in 2017, with no signs of stopping !
