PROTEIN YOGHURT BOWL W/ FRUIT Heya peeps, here's an easy one that's sure to squash those late-night dessert cravings. Super yummy yoghurt bowl with homemade summer fruit jam that has roughly 30g of protein! 1) Five table spoons of low fat greek yoghurt and a scoop of your favourite protein into a bowl and mix it up! 2) Put some frozen berries in a saucepan on the hob with a little water, give it around 10-15 mins to reduce and you have yourself a super quick jam. 3) Add jam to yoghurt bowl then add spoon to your mouth and enjoy! You use so much less sugar when you make your own jam, it's literally just the juices from the berries! I got a bag of frozen summer fruits from ASDA and it did the job just fine :) Happy bulking! ๐ช

PROTEIN PACKED SHAKSHUKA
My girlfriend has gotten into making shakshuka recently. She made it for us and I fell in love (again), not just with her but also with this amazing breakfast dish. With origins in North Africa and the Middle East, I wanted to see if I could adapt this simple recipe to meet current dietary aims, TO ADD MORE PROTEIN! ๐ช Here I present to you a banging shakshuka, packed with protein, that's sure to fulfil your needs for an early lunch this summer ๐ฅ
Recipe:
Protein Packed Shakshuka - Serves 2 - 40g of Protein total - Perfect for an early lunch - Pretty damn tasty
Ingredients - 2 Medium Eggs - 1/2 tinned tomatoes (chopped) - 1 red bell pepper (chopped) - 1/2 a cup of red onion (chopped) - 2 cloves of garlic (sliced) - 1/2 a cup of mushrooms (sliced) - 3 slices of chicken breast (chopped into squares) - 2 heaped table spoons of 0% fat greek yoghurt - 2 wholegrain pitta breads Seasonings: salt, pepper, paprika, oregano, chili flakes. Method 1) Heat a dash of olive oil in a small pan over medium heat and the onion and garlic. 2) Once the onion is nearly translucent, add in the red bell pepper, mushrooms and half the chicken breast. Add all the seasonings to taste (I recommend a teaspoon of each) and fry for another 3 minutes. 3) Change to low heat and add in the tinned tomatoes and slowly stir the mixture for 2 minutes, then add the yoghurt and stir for another 2 minutes. 4) Make two small wells in the mixture and crack in your two eggs. Sprinkle some extra oregano and the rest of the chicken breast and raise to medium heat again. Cover the pan and let it all cook for 5 minutes undisturbed whilst you toast the pitta bread. 5) Take the lid off and let the dish cool for 2 minutes. Serve in the pan you cooked in. Scoop the shakshuka onto your pitta and enjoy! PS: I know this recipe serves two but that did not stop me from eating the whole thing on my own ;) Have a nice day! ๐ฆฆ
