Chez Dudé - After Se7en's Korean BBQ Pizza

There are very few things on this planet better than Korean BBQ, the only one I can think of is pizza, so let's combine two of the best things in the world together into one!
So for me, there's no substitute for fresh pizza dough, if you disagree or don't want to make your own then skip ahead...

Pizza dough is pretty simple and easy to make, basic yeast pizza dough only needs a few things and a few steps to get beautiful.
You'll Need: 1 1/2 hot water 2 packets active dry yeast 2 tablespoons sugar 1/4 cup olive oil, plus more for bowl, brushing and garnishment 2 teaspoons coarse salt 4 cups all-purpose flour, spooned, sifted and leveled (plus more for work surface)
Before we get to all the fancy dough tossing, we need to activate ou yeast. Pour water into a large bowl, add yeast and let stand until foamy, should be roughly five minutes. Once it's nice and foamy whisk sugar, oil, and salt into yeast mixture. Add flour and stir until sticky dough forms. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour.
While the dough is resting and we're gonna make our delicious, sticky, sweet, spicy, savory Korean flavored BBQ sauce.
You'll Need: 1 cup soy sauce 1 cup Dark Brown Sugar 1 pear, medium chopped and cored 1/4 cup Water 1 tablespoon apple cider/rice wine Vinegar 1-1/2 tablespoons of gochujang 1-1/2 teaspoons Sesame Oil 1/2 teaspoon coarse ground Black Pepper 1 heaping teaspoon fresh grated Ginger 3 stalks of green onion, finely chopped 2 tablespoons of minced garlic
And a basic cornstarch mixture, 1 tablespoon each of Cornstarch and water.
Add everything, except the cornstarch mixture, in a big mixing bowl and whisk it all together. There's no need for anything to dissolve yet because we're going to pour it all in a medium saucepan and bring it to a boil. While we're waiting for the sauce to boil, mix your water and cornstarch together. Once the sauce is at a boil, add in the cornstarch/water mixture and whisk until thick.
Once thickness is achieved, set aside to simmer and keep warm.
With our sauce and dough ready we have to top this pizza because the sauce and dough are great together, but let's make this perfect!
You'll Need: 1/2 pound of chicken, chopped 1 cup of mozzarella cheese 1/2 red onion, diced Cilantro for garnishment 1/4 cup of butter Salt and pepper
We're gonna grill this chicken in some brown butter to add an extra dimension of flavor, first things first, preheat the pan over medium-high heat. Why are we preheating a pan? We need two things to happen, we need the fats in the butter to break down better and faster and we need an even sear on the chicken to seal in all the natural goodness of the chicken. So preheat the pan over medium-high heat, then add the butter it will melt quickly and brown, when the butter is brown add the chicken with a pinch of salt and pepper and let it sit cooking for a few minutes, turn once, another pinch of salt and pepper and let it sit to sear.
Once the chicken is golden brown on both sides, reduce the heat to low and spoon in some of the BBQ sauce and we're going to simmer our chicken while we prepare the rest of our toppings.
***AUTHOR'S NOTE: If you aren't comfortable making pizza dough or in the kitchen, turn off the heat and let your sauce and chicken sit, you can always turn the heat back on, but if you're worried about burning the food then you can turn it off it's OK!***
While the chicken is simmering, we're going to dice our red onion. If you don't know how to dice, you can fake the proper technique by simply making small cuts to your own sensibility and taste. Now if you have precut cheese that's fine, but if not this is the time to grate your cheese (get the fresh stuff you won't regret it!).
With our toppings ready, let's have some old fashion fun and make our dough! Portion out the dough to roughly the size of your hand and flour your work surface. Roll your pizza dough in the flour and knead. Kneading is done by pushing the dough away from you with the heels of your hands and stretching it flat. The goal is to lengthen and stretch the gluten strands in the dough. It takes some practice but you wanna try and get your dough as even and flat as you can.
With our dough ready it's time to top! Drizzle the empty dough with olive oil and ladle your chicken straight from the STILL SIMMERING saucepan to the dough, add more sauce, cheese, red onion and more sauce for good measure!
Preheat the oven to 475 degrees, put an upside cookie sheet on the center rack. Get a large piece of parchment paper and sprinkle with some flour and put the cookie sheet with the flour on the upside down cookie sheet in the oven, why?!
Because we're going to get a delicious golden crust on the bottom of our pizza and if you don't have a cooking stone to put in the oven, this will ensure that your pizza doesn't get stuck in the oven!
Place pizza on our homemade pizza rack for 10-15 minutes, pull it out and garnish with freshly chopped Cilantro, and serve it hot and ready!
