I need another list of super-easy food to consume when I’m too tired or depressed or unorganized. I can’t find the one I reblogged last year or whenever. What’s your favorite post/link?
1) a good one here - https://www.tumblr.com/fiti-vation/139291124325
text of same post but with broken images here - https://www.cosmopolitan.com/food-cocktails/a41173/what-to-eat-when-you-have-no-food-at-home/
(no food shaming, special diets are ok)

A simple and delicious very common food in Catalonia: toasted bread with tomato rubbed on it, a drizzle of olive oil, a pinch of salt, and topped with a charcuterie meat or cheese of your choosing. In this case, a piece of botifarra (a Catalan pork sausage).

Kylling noget! 🧑‍🍳 🧑‍🍳
Tumblr media
Chicken something, for 5-6 adult people portions. Also I promise it tastes better than it looks.
Ingredients:
500 g Pasta
1400 g Chicken tender loin
300 g Bacon dices
Bit of butter (maybe)
1/2 L cream
Garlic powder, paprika powder, pepper, salt
How to:
Put bacon dices in a pot and start crispying it. Usually takes 45-ish minutes on low-medium heat.
Cut chicken into bite sized pieces. If you don't like the vein in it just pull or cut it out now. Takes 5 times longer, but will make it more enjoyable to eat :]
Put chicken in a big bowl or dish and season with salt, pepper, and garlic. Don't use too much salt here; bacon is salty and too salty is not good. Let sit until bacon is at preferred crispiness.
Fry chicken in the bacon fat. If you somehow got your hands on lean bacon add a bit of butter. You do not want to fry chicken without fat. You just want all of the chicken to turn white on all sides, not necessarily golden brown.
Add cream and bring to a boil while stirring. You just want it to bubble two-three bubbles while you stir.
Turn down to simmer and add paprika.
Taste test.
Now just let simmer while you boil your pasta like the bag tells you to.
Variation ideas:
Add vegetables if that's what you want. I found corn (from can because cob is just too much work) to be really good as an add on.
Parsley is probably really good as fresh herb on it. Maybe chives for a bit of onion flavor?
Chicken things are usually really good with rice. Try that if you can't have pasta :]

If yall remember a bit ago, I shared a post going around about the home cooking queer-eye-Antony show and how it includes actual useful tips and hacks and such.
So one I liked was this woman who made packaged chocolate cake, you know the kind you just add the wet ingredients to. So she added sour cream to make the cake more moist (I am adamant this is about the only appropriate time to use that word: about a cake). I think she also added a chocolate pudding mix and maybe some spices? And the judges absolutely loved it.
So I got the sour cream and a butter cake box. The recipe calls for 2/3 cup milk, so I did half milk and half sour cream. For fun I also added a bit extra vanilla essence and like half a lemon's zest. (I once made hamantaschen that involved lemon which changed my life, they were absolutely fantastic. I sadly and infuriatingly lost the recipe).
Oh and I also added a good pour of 100's and 1000's, sometimes known as Sprinkles, for that birthday confetti cake effect.
So the 100's and 1000's disappeared in the oven, must have melted into the cake, but let me tell you this cake is *so good*. Its moist and fluffy and lemony but not acidic (bc I used zest not juice), and its pretty filling. So I highly reccomend this hack.
For reference, I made the same brand's chocolate mix recently and it uh really needed the icing that came with to be edible. The exact definition of mediocre, for when you have nothing better around.
Future plans are to make the chocolate again but this time with the sour cream, coffee (to bring out the chocolate flavor), cinammon and a tiny bit of hot paprika.
I also think the butter cake would be really good with a bit less lemon in the batter plus a lemon cream cheese icing. (Cream cheese was also in the fabled hamantaschen recipe). And maybe some kind of decorative fruit? I think it can go a little fancier Im just not sure how.
I think even just the sour cream makes the packaged recipe much better, from a bit too dry to good moist and the right amount of fluffy/density. It didnt feel like much more work than just making package instructions, though full disclosure I did have help.

Marinading thinly sliced red onion in lemon juice, apple cider vinegar and dried oregano to mellow it down before adding it to salads. Sometimes I add olive oil too.

Sweet, sweet, swede
We all love a bit of swede. Though it is also known as a “rutabaga,” and a “neep” if you live in Scotland. Swedes look a bit like Turnips, are purply skinned, with bright yellow-orange flesh. From stews, or roast, to simply mashed, it is one of the most versatile and inexpensive vegetables. Swede is choc full of vitamin c, and around 80g makes up one of your five a day. In the UK swedes are in…

Fluffy Pancakes for a lazy Sunday
Food is about making an impact
Rating Easy| Preparation 5 min | Cooking 10 min | Serves 4
Ingredients
300g all purpose | plain flour, (2 cups | 10 oz)
50g granulated sugar or sweetener, (1/4 cup | 2 oz)
4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
450ml of semi skimmed milk
50g butter
2 teaspoons pure vanilla extract
1 large egg
Option fruit (blueberry / strawberry ...)
Preparation
1. Mix together the flour, sugar, baking powder, baking soda and salt in a large-sized bowl. In the centre of the mix make a hole and add the milk, slightly cooled melted butter, egg and vanilla extract.
2. Whisk the wet ingredients together until smooth (there may be a couple of lumps but that's okay). If you find the mixture too sick to pour, add a little more milk. Set the pancake batter aside and start heating the pan.
3. Heat a nonstick pan over low-medium heat and wipe over with a little butter to lightly grease pan. Pour 50g (¼ cup) of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
4. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
Serve with maple syrup, jam, honey, fruit, ice cream or yoghurt, or enjoy plain!
