@thedefineddish does it again. I made her chicken tandoori burgers from the cookbook and served them with sweet potato fries 😋 they were so easy to make and reheated really well, which was perfect for meal prepping! I haven’t had this egg combination in so long and I forgot how much I love it 😍 local eggs with broccoli, spinach, Aleppo pepper and nutritional yeast! I also had a slice of @canyonglutenfree with avocado, @traderjoeslist za’atar blend and more Aleppo pepper. As you can tell, I love Aleppo pepper. Talk about a view I haven’t seen in a while ☺️ I used to love running around campus. It always helped clear my mind and I loved morning runs especially since no one else was around. I’ve had various running injuries since I ran a marathon in 2018 which has lead to a lot of time off running. It’s also made me so much more appreciative of when I can run. I have been in PT since October and am just getting into a run/walk program. It’s crazy to think that one time I ran 26.2 miles and now I run one minute at a time. The thing is... both make me happy. CARROT CAKE OATS 🥕I took @onedegreeorganics sprouted oats (the best kind tbh) and added grated carrot, @traderjoes pumpkin pie spice, @themacateam maca, ginger, and an egg. Microwaved until it was cooked and fluffy, stirring ever minute. Topped it with banana, peanut butter and chia seeds! This might be one of the best breakfasts that I have made in a while. Carrot tomato soup with “cheesy” tofu croutons.... even though it’s been it’s been feeling like spring 🌸 I have been wanting to make a tomato soup all winter so I took advantage of that random 28oz can of tomatos I had and went for it. I based it off of a recipe from @peasandcrayons but added in white beans for a thicker, higher protein soup! TACOS TACOS TACOS I love tacos. They are the perfect way to use up random food and make a fun meal out of leftovers. Grain free taco shells are so expensive so I have had fun making chickpea flour tacos! These tacos had roasted cauliflower, butternut squash, black beans that were sautéed with salsa and of course, avocado. The recipe for the chickpea flours tortillas is from @moon.and.spoon.and.yum And of course, they are not corn tortillas, they are still really good! I have no idea how she does it, but @kalejunkie kills it every single time with her recipes. This school year I have made so many, and her cinnamon banana bread has been the latest hit. The banana bread is simple, with no added sugar and lots of cinnamon. This time I made It plain but it would also be so good with chocolate chips added it. I recently introdiced my mom to baked tofu with this super easy lunch. We had kale salad with @eatingbirdfood oil free zesty tahini dressing, shaved carrots, avocado and easy baked tofu 😋 For the tofu I pressed it for about 30 min, then cut it into cubes. I tossed the cubes with a little arrowroot and seasoned with salt and pepper. Then I put them in an oven at 425F and cooked them until golden brown (about 30 min). This Monday coming in hot with an amazing avocado toast. The toppings: za’atar blend, Aleppo pepper flakes, sea salt and lemon olive oil This was the first time I have tried @traderjoes za’atar blend and it was so good. I loved that the blend of seasonings was so different than what I normally use. If you haven’t tried it before, I would highly recommend. Buying seasoning blends is a great way to exposure yourself to different flavors and spices without having to buy tons of new spices! Its the season for rainy spring days so this carrot soup makes for the perfect cozy lunch. CARROT MISO SOUP recipe by moi Olive oil 1 c. chopped onion 3 cloves garlic, minced 1 lb carrots, chopped ½ tsp ginger ½ tsp paprika ¼ c. tomato paste 3 c. chicken broth 15 oz white beans 15 oz coconut milk 2 T miso Salt/pepper to taste Sautee onion, garlic and carrots in pot with olive oil until softened. Add ginger and paprika, stir for about 30 seconds. Add tomato paste, chicken broth and white beans. Bring to boil, and the simmer until carrots are cooked through. Stir in coconut milk and miso. Throw back to the days when Girl Scout cookies weren’t $5/box and I wasn’t gluten free. Samoas were the favorite cookie in the house. This weekend I used minimalist bakers recipe for Samoas and LOVED them. What is not to like about almond flour shortbread, caramel, coconut and chocolate??
