If there was ever a time to give our meal planning program, a rumble, this is it. We’re publishing our Thanksgiving menu this Friday and it’s delicious and comprehensive and just...so good. WINTERY MINESTRONE! Do you also need to recalibrate from all the sweets and drinks and goodies of this social season? Made a huge pot of this veggie packed soup that reheats well and can feed a crowd or be packed up and gifted to teachers, neighbors, new parents to etc. Requires quite a bit of chopping but well worth it! - 2 Tbsp. extra virgin olive oil 2 stalks celery, small dice 2 carrots, small dice 1 yellow onion, dice 1 leek, cleaned, halved and sliced thin 4 cloves garlic, chopped 1 jalapeño, mostly seeded 1 1/2 cups cooked white/canellini beans (about 1 can) 2 tsp. chopped rosemary 2 tsp. thyme leaves 1/2 tsp. dried oregano 2 cups small diced butternut squash 1 13.5 oz. can crushed fire roasted tomatoes 4 cups vegetable or chicken broth 1 bay leaf 8 oz. dilatini pasta, optional 3 big handfuls chopped kale or favorite dark leafy green In a large Dutch oven, heat the oil over medium heat. Add the celery, carrot, onion, 1/2 tsp. sea salt and saute until softened. About 5 minutes. Add the leeks, garlic, jalapeño and saute another 5 minutes to soften. Add the rosemary, thyme, dried seasoning, squash, and fire roasted tomatoes. Cook that another few minutes. Add the broth, bay leaf and bring everything to a gentle simmer. Cook 15 minutes until the squash is just tender. Add the pasta and cook another 10 minutes until cooked. Stir in the greens just to wilt, about 2 minutes. I like to let it cool down on the stove for a bit at this point to settle. Remove the bay leaf. More luscious? Add a splash of cream.
