Hearty Meat Stew
When I first started making soups and stews I made them like Rulie does. Put the ingredients in a pot with water and boil them until they seemed done.
Now I know a bit better. Good soups and stews take time. It's something you have to build up from nothing.
Malon already had the meat cooking in butter so that made this meal super easy and fast to create!
I like to season goat meat ahead of time. The day before if possible. Malon used vinegar, soy sauce and garlic so I had to match those flavors in the stew.
I started with the drippings from the meat and added onion, peppers and more garlic. I cooked those until translucent and then added in the tomatoes. I cooked that for five more minutes before I added the chopped goat meat. Next I added two cups of beef stock, the carrots and hearty truffles which I chopped into rough cubes. Cook thirty minutes until the meat is tender and the veggies and mushrooms are soft.
Now I understand Mushrooms can be hard to find during the off season so feel free to substitute with any mushroom. I recommend Porchini, black trumpets or morels for that deep earthy flavor.

Pumpkin Pie
Today we had some leftover Pumpkin Pie and then some Salmon Meuniere. The chain teased me allot for that combo. Pie before Lunch. They just don't know how to live.
Everyone wants to know how I make baked goods over the fire. It's pretty simple actually.
Start with some hot coals. This requires some timing so light your fire at least an hour before you start cooking.
You want four medium sized 'sugar' pumpkins. Take your time cutting open the top and scrape out the seeds and insides. Don't puncture the skin or the future mixture will leak out. It's just like cutting open a moblin to get it's guts! :D
In a mixing bowl, mix 4 cups of heavy cream, 1/2 teaspoon of freshly ground cinnamon, 1/4 teaspoon of freshly ground ginger, 1 cup of sugar and 1/4 teaspoon of salt. Pour one cup of the mixture into each pumpkin and put the lid back on. Put the whole pumpkin on the hot coals to cook. They could take longer than an hour depending on the size and heat of the coals.
From here you can mix it and eat straight from the pumpkin or smooth out the mixture and make a proper pie with fried crust!
To make it into a proper pie you'll add eggs and lemon zest to the mixture. Then add sugar and fried crust on top. Lastly bake the mixture in a cast iron over an open fire until its pretty and as firm as you like your pie.
