Chocolate Silk Salted Caramel Pie
I recently took on a challenge over at Nellie Bellie’s Kitchen on Facebook.  For four weeks we made different pie categories.  Here is one of my recipes that I created for the Holidays.  I hope you try it as it was pretty easy.  I have since found some easier ways to make the caramel, as mine took three hours of constant stirring and adding milk to get it to the light caramel color that you see in the picture.
Rich, Decadent, Full of Flavor, Delightful!  That is how I would describe this Designer Pie…..
  Even though this looks like a Million Dollar Pie….
You might be interested that I even purchased some of the ingredients at the 99cent store.
Perhaps you have a Dollar store in your neighborhood.  I think it’s only California that has the 99 cent stores, which were the original idea, created by a liquor store owner in Hawthorn, California, who noticed that whenever he priced items at 99 cents, they would sell faster.
Here are some of the ingredients that I got there.
The Graham cracker crusts were really fresh, and I was surprised how good they tasted.
Cool Whip, Baker’s chocolate bars, milk chocolate bar, whipped cream, sugar, cornstarch
    Chocolate Silk Salted Caramel Pie~ recipe
Recipe Type: Dessert

Total time: 1 hour
Serves: 2 pies
Rich, Decadent, Delightful, and bursting with flavor, this Designer Pie will WOW your friends and family and keep them coming back for more. Not only that, it features superfood ie dark chocolate and pink sea salt
Ingredients
Premade Graham cracker crust
2 cans sweetened condensed milk ( for the caramel)
1 c sugar
1/4 c cornstarch
1 can evaporated milk
1 can coconut cream
1/2 bag dark chocolate chips or ( 6 unsweetened Baker’s Square chocolate )
2 fresh eggs separated
1 tsp instant coffee
1 1/2 tsp vanilla extract
1 T real butter
1 solid chocolate bar ( for chocolate curls)
1 c caramels ( optional)
1 tub Cool Whip
1 Can of whipped cream aerosol can for topping
Instructions
Prepare your caramel – sweetened condensed milk in a double broiler until thick and caramel color, adding milk as it continues to cook. you can also add a couple of regular caramel candies to melt in the mixture. Another method would be to put the condensed milk in a glass container and put it in the microwave on 1 minute intervals until it reaches the desired consistency. It should be thin enough to pour on strings.
Pie Filling – In a double boiler, whisk sugar and cornstarch together on medium heat.
Slowly add 2 1/2 cups of room temperature coconut cream and evaporated milk ( combined)
( you can substitute regular milk here is preferred)
Add the chocolate pieces to mixture
Beat two egg yolks, adding a little of the hot mixture to them before adding to the pot of hot liquid. This will prevent your eggs from cooking. Save the egg whites for another project.
When your pudding mixture achieves “trace” ( see photo) you can then add the coffee, vanilla, and butter.
Layer it on – Pour chocolate pudding mixture into prepared Graham cracker crust , layering with Caramel then Cool Whip that has been warmed to spreadable consistency.
Finish with a layer of cool whip, then flute the top with the can of aerosol whipped cream, drizzle more caramel on top, layer with chocolate curls, and sprinkle some pink sea salt on top.

I hope you try this recipe.  It will delight your friends and family.  Let me know if you tried it.  Picture 5 shows what “trace” should look like.  Trace literally means that you can trace your name with the mixture.
