I first came across this recipe when watching Rick Stein’s ‘French Odyssey’. Watching him make it felt super homely and I was in desperate need of some comfort food…that was a little different than my usual reaches.

Comforting Chilli
We had a similar dish made by my talented sister-in-law, when we were in the UK. We loved it so much i had to recreate it when we came back home!
It’s such an easy week night dinner and freezes well – so make a double batch for an extra quick meal!
We serve ours topped with pickled Jalapeños, Franks ‘Red Hot’ sauce and a spoonful of Greek yoghurt – along side half a baked potato and a green salad…

This is a simple, yet delicious dish. When I first created this recipe, I was inspired by Kylie Kwong’s ‘Mrs Jang’s home-style fried eggs’ which a relative had made me a number of years back.
