Why Croissants?
And I love croissants! It's so delicious. When I first went with my mother to paris, I ate a croissant. My mouth fell immediately in love with the flavour.

Boulangerie Poilâne
This is the place where I bought the croissant. It was just a normal croissant, but they're actually a lot of types.
First you have a 'Pain Au Chocolat'. This croissant combines the flavour of butter and chocolate. Then you have 'Pain Aux Raisins' that is available with raisins or a custard or almond cream filling. You also have 'Croissant Au Beurre' that contains a lot of butter. In the fourth place there is Croissant Aux Amandes. They are also known as almond croissants because they have an almond cream filling and are topped with chopped almonds. The croissants are then re-baked until they are crisp, so thats very special about it.
And last but not least we have the Croissant Ordinaries. It's just a normal croissant that you can eat with everything. It's also my favorite breakfast dish.

Recipe
This are the ingredients:
4⅔cups/605 grams all-purpose or bread flour, plus more for dusting
⅓cup/66 grams granulated sugar
1tablespoon plus ½ teaspoon/12 grams kosher salt
2¼teaspoons/7 grams active dry yeast
¾cup plus 2 tablespoons/214 grams water, at room temperature
½cup/120 grams whole milk, at room temperature
¼cup/57 grams unsalted butter, cut into ½-inch pieces, chilled

Puff pastry
A special thing about making croissants is that they use puff pastry. It's actually dough that is twisted. They first place the butter on the dough and they fold it several times. Afterwards, they slice it in triangles and roll it up. And on the end they paint the croissant with egg yolk. And then they place it in an oven.
Cédric Grolet
The person in the video is named Cédric Grolet and I watch him all the time on tiktok. He is so good at baking croissants and other types pastry. He has so much followers and his content is great. He even has his own website! He is a French pastry chef who is known for his innovative and creative approach to pastry-making.
Grolet trained at several prestigious culinary schools in France, including École Nationale Supérieure de la Pâtisserie, and worked in various high-end pastry shops before becoming the head pastry chef at Le Meurice, a luxury hotel in Paris.
Grolet has also authored several pastry cookbooks, including "Fruits" and "Opéra". He continues to innovate and push the boundaries of pastry-making, and his creations are highly sought after by pastry enthusiasts around the world.

Origin
But where do croissants actually come from? There are 2 theories because it is still not clear in the present. That's very weird. I will explain the 2 theories so that you already know a little more about them.
One popular theory is that the croissant was inspired by the crescent-shaped emblem of the Ottoman Empire. According to this theory, the croissant was created in Vienna, Austria in 1683 after the Austrian army defeated the Ottomans and the bakers of Vienna created a pastry in the shape of the crescent as a symbol of victory. The pastry was then brought to France by Marie Antoinette, who was from Austria, and it became a popular breakfast food.
Another theory suggests that the croissant was invented in France during the 19th century. This theory states that the croissant was created by French bakers who were inspired by the Austrian kipferl, a crescent-shaped pastry that was similar to a croissant but not as flaky and buttery. The French bakers then added their own touches to the pastry, including more butter and a flakier texture.
Regardless of its origin story, the croissant is now a beloved pastry enjoyed around the world.
