I have been cooking a lot recently, but not taking photos of the food. Partly this is simply to take a break and simply enjoy the cooking and eating process. Also, I think, it’s because no matter what I cook, it never seems to match the simplicity, elegance and profoundly holistic experience of South Indian vegetarian dining at Anima in Mysore. I really miss this food, as well as the people behind it... and I’ll keep working on mine!

Khara Bath (similar to polenta) for a light dinner tonight... finely ground semolina cooked with 3 diced veggies, and tempered with mustard seeds, turmeric and asafetida (umami and digestibility), urad and chana dals (roasted flavor and crunch), curry and coriander leaves (herbal fragrance) and a sprinkle of fresh-squeezed lemon juice for zest. Pinch of salt. Yum!

This is the classic Karnatakan combination of Sambar and rice. The Sambar contains three different types of lentils, coriander, cinnamon and mild Byadgi red chiles (among other spices), and is traditionally served at the end of a meal. It can be made with a variety of veggies... here - daikon radish. Healthy, delicious and...simple? You decide! Thank you to Sandhya Vasudeva and the folks at Anima Madhva Bhavan for making my stays in Mysore so astronomically rewarding! 💕🌿🙏
