A Darn Good Burger! #Burgers turned out AWESOME! #cheeseburgers; Swiss, American or Cheddar ♡ mine? Cheddar w/#sweetbabyraysbbqsauce In 85% lean ground beef, I used a little #leaandperrinsworcestershiresauce S&P, #smokysteakburger #grillmaster #seasoning AND an envelope of #liptononionsoupmix that I put in a strainer over bowl to get the powder/not the dried onions; it worked.. really tasty‼ Along w/#caramelizedonions‼ and Sweet Baby Ray's BBQ Sauce. Food for Granddaughter
Yes, I should have said from beginning, in “about” page, that my purpose 98% of the time…when it comes to cooking, food, eating…it’s with my granddaughter (Lily) in mind (15 at time of this post); there’s some times it’s something my daughter likes/wants and times my son (Lily’s daddy) 🥰 Just as an update, her most frequently used utensils are chopsticks 🍜

Mexican Beef Barbacoa
Tumblr media
Slow Cooker style. Mostly adapted from the stay at home chef; with what was said by the well known Chef Pati Jinich in back of my mind.
So…my daughter made this following stayathomechef recipe exactly. And it was DELICIOUS‼ “I” on the other hand 😁 🤭 😉 added dried (rehydrated) Hatch New Mexico Chilies, an onion pulverized in food processor, a dash of allspice & a dash of cloves. We did use the…

What I Ate …
Tumblr media
– adapted from Dirty Rice 😋
I kind of went off that recipe, Emeril’s version, and what “I” like, but with ground beef instead of sausage; that’s what I had 😉 🐮 🐃 also red and orange peppers instead of green…for same reason.

Bourbon Sloppy Joe Recipe from the Whiskey Reviewer
Pretty much, except I didn’t have green peppers so I added red and orange 😉 and I skipped the raisins. A “grown-ups sloppy Joe’s” –
Ingredients 1 lb ground beef 1 medium green bell pepper, diced 1 medium yellow onion, diced 2 cloves of garlic, diced 2 to 3 cups of plain tomato sauce 2 tbsp brown sugar 1 tsp crushed red peppers 1 tsp chili powder

Shredded Chicken Nachos
Tumblr media
Loaded Shredded Chicken Nachos
I just went by the timing and temperature of previous post of Pulled Pork Nachos , but switched it up to shredded chicken, that I made in slow cooker first. I started that earlier in the day…adding A LOT of seasoning. Making #shreddedchicken(or “pulled chicken” for #chicken nachos, in #slowcooker / #crockpot, with 3 large chicken breasts, #flavor with less than 2…

Swedish Meatballs with Campanelle
Loosely adapted from Lemon and Things
Tumblr media
I just changed up a few things. I use Better Than Bouillon, both Beef Base and Roasted Garlic Base. I used some heavy cream, and some freshly ground nutmeg. I didn’t use sherry. Anyway, it tastes great! It also went really good with campanelle pasta because it holds sauces and/or gravies really well. Happy family. ♡

What I've been Cooking
What I’ve been Cooking

…when I don’t feel like cooking. QUICK, EASY, TASTY!
I’ve been so into one pot/skillet pasta meals. I always go back to a previous post
One Pot Andouille Sausage Skillet Pasta
for measurements, to get ratio of liquid to dry pasta ratios. This last one was using ground beef instead of sausage, Italian seasonings and Italian cheeses.

I’ve done multiple variations, depending on what I have…

Tumblr media
Big thumbs up.
Tumblr media
I had 2 large chicken breasts, that I would split in half horizontally “if” I made them for a different recipe; but…with Kabobs I cut them into 1 – 2 inch cubes.
I first marinated the chicken breasts in buttermilk the night before in refrigerator; we’ve been…

Cast Iron Skillet Chicken Pot Pie

Cast Iron Skillet Chicken Pot Pie
– Cooking With CJ
Tumblr media
I did a few things different, not because I thought it was better (well, except for #BetterThanBouillon, that makes everything better), but only due to using what I had available. Like we don’t like potatoes in our chicken pot pie. I had/used 2 LARGE chicken breasts. I didn’t have frozen corn but I had fresh. I used fresh cream instead of…
