½ teaspoon pepper, (adjust to your taste)
1 teaspoon dried basil
¼ cup fresh basil leaves, chopped
extra chopped fresh basil (to serve)

INSTRUCTIONS:
1. Preheat the oven to 375 degrees. Then in a large cast iron skillet, heat the olive oil over medium high. Sprinkle the chicken thighs with the Italian seasoning as well as salt and pepper to taste. Place the chicken in the pan skin side down, cook for 5-6 minutes or until deep golden brown. Flip the chicken and cook on the other side for another 5 minutes or until golden brown.
2. Remove the chicken from the cast iron skillet and cover. Add garlic,onion and red peppers into the pan, cook for 4-5 minutes or until translucent. Stir in the sun dried tomatoes, rice, crushed tomatoes and chicken broth. Seasoning with little salt, pepper and dried basil. Bring to a simmer and allow the rice to soak up all the tomato flavour.
3. Return the chicken to the skillet with the skin side up and right on the rice. Don’t forget to rotate the chicken in the tomato sauce to coat. And then bring the liquid back to a boil. Cover the pan and place it in the oven. Bake for 40 minutes. Or until the rice has softened and absorbed the liquid and the chicken is cooked through.
4. Remove cover; change oven settings to broil / grill on medium heat for a further 8-10 minutes or until the chicken is crispy and golden.
5. Add more salt and pepper if needed and sprinkle with freshly chopped basil.then put the chicken back on top of the rice and serve.

I used skin-on and bone-in chicken thighs for this dish because I really think they’re one of the best candidates for a one pot meal. The bone-in chicken thighs consistently come out moist and tender after being baked in the oven, which is important because no one likes dry chicken. This dish can quicken many people’s appetite. And if you need to serve many guests, you can use a large cast iron skillet and double the ingredients if needed.
And Remember that Italian cooking is an art and not a science, and just as Italian people are easy going in their mannerisms, so are they in their cooking. They do not stick to recipes, they like variety, and most important of all, what they make depends on what looks fresh at the market and what they have on hand.
