Vegetables – The original recipe calls for thinly sliced onion, celery, carrots, cucumber, and cauliflower, along with halved cherry tomatoes, minced garlic, and chopped fresh parsley in the dressing. Honestly, you can use any sturdy vegetables for this; great alternatives include zucchini, bell peppers, broccoli florets, mushrooms, snow peas, and radishes.
Dressing – The dressing is a simple combination of white wine vinegar and olive oil. If needed, you can substitute any neutral-flavored oil, and red wine vinegar would also be a good option.
Seasonings – Kosher salt, ground white pepper, and ground mustard powder are the preferred seasonings. If you don’t have white pepper, ground black pepper will work just as well.
