Brown butter lemon thyme pasta with cremini mushrooms, tinned mussels and their broth, black pepper, and parmesan cheese

I want everyone to be able to have a comforting meal when things are tough so I am making a simplified version of the congee that I eat each morning available for all the stomachache havers and breakfast skippers <3 trust your gut!!! Recipe:
In a medium to large pot bring 7 cups of water or broth to a gentle boil, then add 1 cup to rinsed short grain or jasmine rice.
Add in a teaspoon of ground ginger and a big pinch of salt.
Bring back to a simmer then partially cover and let cook on medium low heat for 24 minutes without touching.
Turn off the heat and whisk rapidly for 5 minutes or until the rice grains are broken up and the gooey texture is formed!
Finish with finely chopped scallion, toasted sesame oil, and I like to add cooked shrimp or bacon!
If you struggle to get in your fiber you can add a cup of adzuki beans too and it goes together beautifully

I read a fair number of recipes on the ten thousand interchangeable recipe blogs that exist, and often they say something like "This recipe is a family favourite!" or "This a crowd-pleaser" etc. and I roll my eyes a little bit every time because of course they are, it goes without saying! People like food! Nearly any special-occasion home-cooked meal is going to be popular.
But there is one recipe, one cake, that has recontextualised all those comments for me and now actually I think those bloggers might be wrong about what a family favourite is. It sure as hell isn't Interchangeable Chocolate Cake No. 7.
I'm telling you this because I need you to know the seriousness of the power I am going to bestow on you. And hey, maybe your friends and family have different preferences than mine do. Maybe you need to find another recipe to fill this role. But you must know that there's a recipe out there, and not even a particularly alluring one or a particularly difficult one, which people will bring up in unrelated conversations to you four years later.
If I so much as say the word cake, my family all turn to face me like a pack of hungry wolves. Even the ones that don't like food!! Health nuts and people who simply don't enjoy eating and people with no appetite and people I have no goddamn memory of ever having cooked for, all of them come up and say to me "Hey remember that cake-" I asked my brother and his girlfriend what foods they're looking forward to, when they return home after three years in Japan, and they say "You know that cake?"
It doesn't sound particularly appetizing. I only made it the first time because it was gluten free and I had a bunch of lemons. Please don't let the name inform your opinion here. This is a fairly fast and simple cake that requires no special equipment and people will literally never stop asking you for it.
It's not even my favourite cake! I'd rather have basque burnt cheesecake, which is harder and more expensive to make and consists almost entirely of fat and sugar but still manages to be a little savoury... But people want the weird corn one.
To be fair, this is the only cake that'll make me dip my fingers into boiling sugar without regret.

This one is stuffed with a fried egg and rotisserie chicken, folded in half like a taco. 🌮
They're great stuffed with chicken salad too, or roll one up into a breakfast burrito. 🌯 😋
Quick, easy, delicious! 👌
📌 For one:
🧈 1/4 tbsp of butter or buttered skillet
🥚 1/2 an egg
🧀 1/2 cup (56 grams) of shredded mozzarella
Double for two ✌
Spread out evenly, brown on one side then flip like a pancake.
Optional add-ins: 🍅 🥓 🧅 or whatever rocks your socks!

Keto Butternut Squash Soup 🍲
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 📑 1 Butternut Squash small to medium-sized 200 ml Coconut Milk, approximately half of a standard 400 ml can of full-fat 1-2 Red Onions 1 head Garlic 2 Tomatoes or 1 cup of cherry tomatoes 350 ml Vegetable Broth (1 1/2 cups) 1 tsp Fresh Ginger optional: grated Olive Oil enough to drizzle over vegetables Fresh Cilantro: for garnish For Grilled Cheese: 2 slices of keto bread, preferred vegan cheese, vegan butter 3 Carrots Seasoning 1 tsp pepper 1 tsp dry cumin 1 tsp paprika 1 tsp dried thyme 1 tsp dried rosemary 1 tsp chili flakes to taste 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨 🔪 Preparation: Preheat the oven to 380°F (193°C). Prepare all listed vegetables and place them in a baking dish. Add all seasonings, including cumin, paprika, thyme, and rosemary, and a drizzle of olive oil. Cover the dish with aluminum foil. Roasting: Bake for about 1 hour or until the vegetables are golden and soft. Blending: Place the roasted vegetables in a blender, add the 350 ml of vegetable broth and ginger (if using), and blend until smooth. Cooking: Transfer the blended mixture to a pot and place it on medium heat. Add the coconut milk and stir for 2 minutes. Final Touch: Adjust the seasonings to your taste.
