post-canon Lemon Irvine:

lemon's teenage "delusional" crush settles into steady love for mash.

she shoulders the burden of supporting her poor family (chapter 3). despite how silly she acts, she often had night-less sleeps worrying about her family and her future.

her friends had found their potential, even finn, her kindred cowardly spirit. lemon was ecstatic for them but she felt hopeless. she had no hidden/hereditary abilities or power or connections.

as graduation (and adulthood) drew closer, lemon felt so lost. she had no solid career prospect, no powerful mentor to guide her and a family to take care of. she couldn't live in her mash bubble forever.

the safest path was to join the bureau of magic as a staffer, it would guarantee a steady income.

lemon knew binding magic (chapter 2 & 126) and training animals with kindness (chapter 126) so she settles on care for magical creatures

her philosophy is kindness above all: "you need to approach animals with love. that's how you build a strong bond" (chapter 126). she wants to help all creatures, especially difficult ones deemed dangers to public safety.

so she has to deal with ferocious and enormous creatures which terrifies her but knowing they act aggressively because they're anxious/scared makes her reach out to them.

Forming close bonds with animals she helps, they're willing to fight for her e.g. cerberus in chapter 126. they'd bind herself to her and lemon could summon them at will.

her kindness and bravery impress even her professors but make her friends worry. lemon has lost all sense of self-preservation and often comes back from class injured but with a big smile. she had found her calling!

mash sees her in a new light. he sees her passion, drive and care for others. she has infinite patience and kindness to appease a creature whereas he just uses his fists. her enthusiasm even motivates him to make deserts aimed at magical creatures and to try harder at his dream.

lemon had a way of putting others at ease with her cheerful and warm demeanor. her unhinged side made others less self-conscious too lol.

the gang often accompanied lemon on dangerous school expeditions to protect her and spend time together.
